I think Shun is just misunderstood because he gets lost in his head so much. And also we can't forget the fact that Netflix capitalised on this I would really want to see the cut parts of the show.
As an Asian myself, I think Shun looks very Japanese. He has these big eyes and natural looking nose structure which kinda reminds me of Miura Haruma (RIP) and a younger Yamapi. Also, Usak is a stage name which is derived from his first name Yusaku.
This is completely off track but we Japanese seldom eat raw chiken. it has bacterias and is dangerous to eat. some restaurants serve raw chiken as sashimi but it must be really fresh and it is pretty pricy for daily meal. you can't eat so often.

Even Westerners would never really eat raw chicken it is as you say contains bacteria and it does need to be thoroughly cooked before being eaten. The chicken smoothie is made with boiled chicken although they only explain the cooking process in the show with one very brief shot.
