The BEST Spicy Wontons Anyone can Meal Prep

  • You don't want to miss this all time favorite recipe! These are Spicy Szechuan Wontons. Not only are these perfect for lunch and dinner, but they freeze extremely well. Today's recipe makes about 60 Wontons and will not disappoint. These are like Din Tai Fung, but better and will keep your wallet happy!
    Wonton:
    - 5-6 Dry Shiitake Mushrooms (or fresh)
    - 1 bunch green onions (minced)
    - 9oz Raw Shrimp
    - 1.75 lb pork butt (~10mm chunks)
    - 4.5 tbsp cornstarch
    - 1 tsp white pepper
    - 2.5 tsp oyster sauce
    - 4.5 tbsp water
    - 2.5 tbsp sesame oil
    - Medium thickness wonton wrapper with egg (yellow)
    Spicy Sauce:
    - 2 garlic cloves minced
    - 1/2 tsp red chili flakes
    - 1 SMALL pinch of Sichuan pepper powder (mortar and pestle)
    - 1/4 tsp 5-spice powder (optional)
    - 2 Tbsp chili oil
    - 2.5 tsp soy sauce
    - 1 tsp rice vinegar (or black Chinese vinegar)
    - 2.5 tbsp hot water (at the end to activate oils)
    Filling Instructions:
    1. Rehydrate shiitake mushrooms with hot water for 1 hour
    2. Mince mushrooms to about 5mm pieces
    3. Mince pork to strips then minced to about 10mm pieces. Don’t over mince!
    4. Mince shrimp to about 10mm pieces
    5. Mix all ingredients and let marinade for 20+ minutes
    Wrapping Instructions:
    1. Use a utensil spoon to scoop about two thumbs amount of filling. Try to get a little of everything.
    2. Put into the center of the wrapper
    3. Use a finger and bowl of water to lightly wet 2 of the 4 edges.
    4. Fold in half diagonally and carefully seal to remove all air. You don’t want any air left inside. Trapped air will pop during cooking.
    5. Once folded in half, wet one of the corners. Then carefully take both tips and fold in a downward motion to bring the two together.
    6. Carefully set aside on a piece of parchment paper.
    7. Repeat for all filling
    8. This recipe makes about 60 wontons
    Cooking Instructions:
    1. Bring a pot of water to a boil
    2. Use a utensil to make sure the wontons don’t stick to the bottom of the pot.
    3. In a boiling pot of water, carefully put the wontons into the water (~7 at a time depending on pot size)
    4. Allow to cook until the wontons start to float
    5. Allow the wontons to float and cook for about 2-3 more minutes
    6. Remove the wontons into a serving bowl
    7. Pour the spicy sauce over the wontons
    8. Enjoy!
