In Brazil, people still call those pancakes and crepes "pancakes", which might be confusing, but that´s how it is down here, the difference is that pancakes like those from I Hop, we call "American pancakes". Late comment here but 350 is ideal for temp and just swish the pan around to spread pancakes. Don't turn at all until bubbles look dry and only turn once. Use a generous amount of butter in your batter as well.

these look so good! the only thing that's missing is the 1,000+mg of sodium that are usually in ihop/denny's pancakes! i have no idea why they're loaded with added salt when they 100% don't need it!! same with all the added cane sugar! all you need is buttermilk for sure, the sugar is better when it comes from the maple syrup

I had a light bulb moment. It's not so much how good the pancakes themselves taste, because when you eat an IHOP pancake by itself no lie its kinda bland. But it's more of a texture thing that makes their pancakes taste so good when combined with their awesome pancake syrup along with the butter. The taste component of the syrup is really hard to match up when dealing with grocery store syrups. IHOP doesn't use real maple syrup so you can cancel that out when shopping. It's fructose pancake syrup. You can't buy the really cheap ones because they taste NOTHING like IHOP pancake syrup so you kinda have to find a more expensive brand that has a not too thin not too thick consistency. And it has to have a certain "taste" that I've yet to pinpoint exactly what my tastebuds are tasting when using IHOP syrup. The only ones that come kinda close are Log Cabin Organic pancake Syrup and Wholesome Organic pancake syrup. If the log cabin Organic pancake syrup was thicker it would almost be perfect.. add that with the textural component of the IHOP pancake. It's fluffy yet almost kinda has layers. Sometimes when you put a fork into it , you can see where the top layer almost separates itself from the pancake. It's not too too airy and fluffy but it also has some slight denseness to it too. Just like the guy here says it's kinda crumbly. I've reproduced these from trial and error maybe 10 times but I seemed to have lost my MOJO. Back to the drawing board to fine tune the ratios. Also I've read that IHOP uses COLD batter. COLD and lumpy batter

IHop pancakes are box-made style and that's due to having a lot of bleached products and things not good for you. It comes out pretty cakey, and for me that's not good. It's especially not worth it as IHop is charging you $30 for a breakfast meal. If you want amazing and just wholesome pancakes, you need to go back to the roots with southern soul cooking. The best recipes were passed down from southern mamas.

To gauge taste and texture you need to taste without syrup. Actually they are wonderful with a liberal amount of butter. Real butter.
