    I brewed a Mexican lager and used Novalager. Fermented it at 18*c and it was done in about 3.5 days. Let it run for another 7 days, without a "d-rest", and cold crashed for 2 days. After 10 days in the keg, there are no noticeable off flavours with only a slight haze. Im super impressed with this yeast and I'll definitely be using it again.

    THIS was the review I was waiting for, honest to God. Not taking anything away from others who've reviewed NovaLager before, because I know they're honest and would report any detected flaws. But your channel is SUPREMELY no-bullshit, and I figured if you liked this yeast enough to recommend it then I'd have give it a go for sure. Our weather in the US is FUBAR (f**ked up beyond all recognition), we're getting warm spring-like weather - hot weather even> And it's the middle of f**king winter. So I'll be anxious to brew a nice quencher with this very soon. I'll post a video too. Excellent, honest review. Cheers John!

      cheers Skid..... last day of summer here, so I'm about to go and have a few cold ones in the sun.... not that it will get cold here just yet.. but end of summer is big here in OZ, we are sun worshippers. I'm actually peeved I can't brew just ATM because I could be doing an end of summer brew on the back patio...

    nice video. I am going to try this yeast sometime this year. Update : I did a split batch (pressure & regular) at 15c and both of them turned out really good. I will definitely use this yeast again.

    I think its a good workhors yeast. But i'm not sold on this one. 34/70 can be as fast as this yeast at high temperature. Yes 34/70 is not as fucculent. Novalager also can give a more pronounced hop flavour (in my experiance) so it can be good for cold IPAs or IPLs but I wont brew a helles or a pils with it.

    It would be interesting to throw it under pressure but up the ferment temp. I have a plan forming of having a go with this at shed room temp (mid 20's at the moment) and set the spunding valve around 5psi, I do that with 34/70 before cold crashing for a day or 2 but that finishes up pretty quick then> I think it helps the yeast to floc as well so cold crashing under pressure "seems" to be like crashing with a head start. I haven't noticed any off flavours but I don't know how tuned to it I am

      This was fermented at 15psi from day 3 onwards which I should have mentioned.

      @@littlejohnsbrewing it's good to see pressure fermentation becoming more common, I had the local brewery tell me years ago that lager was hard on small scale because of the lack of hydrostatic pressure the beers under compared to the weight of a couple hundred litres at a time

    Be Great if that Nova Lager was like the voss kveik and could brew at 37 degrees C so we didn't
    need fridge control.....

      I will trial it a bit higher at some point to see how it performs at ambient type temps. But reality is we should all have temp control.

    thinking of getting one of the pilsner fresh wort kits from kegland that come with two packs of the novalager yeast. did you direct pitch or did you rehydrate as i know lallemand normally say to rehydrate but i only ever bother to do that half the time lol

      1 pack dry on 12 litre brew.

      @@littlejohnsbrewing put down a pilsner with 2 packs in 20L and it’s only dropped 2 points in 24hrs. thinking keglands storage of the yeast might have not been the best as i picked the order up straight from the reception and the packs felt like they were at room temp and not cold. fingers crossed there’s just a bit of a lag phase and it kicks off soon.
