I'm 9 days into a cooper european lager with beer enhancer with the diamond yeast using a fermenting fridge set at 13c..quite a sulpherousy brew but she's quiet now at 9 days..doing a coopers cerveza with just sugar and novalager yeast next, nice taste tip on the beer enhancer with the coopers euro lager, I was aiming for a 1048 but hit a 1053, she's quite a sweet one that euro.. like the LalBrew yeasts very much..fast and efficient, havent done the Nottingham yet but I've a stout lined up for that.
Thanks Mr S, you've brought faith back to lager, I would like a crisp lager rather than a fast one, so novalager it is, and thanks for sharing your thoughts and knowledge with us. A summer project coming up for me 🍻 P.S. have you ever read the the instuctions for the European Lager kit, it recommends 3 months conditioning !! ( I used to have that demolished in a month lol)
It certainly improved after only one week in the cold. So after three months it will be tremendous but I doubt it will last that long. I'm already half way through.
Hi, thanks for sharing the video re novalager. I too have bought some from the MM. In fact I have added a packet to a Festival NZ pilsner over 36hrs ago and there is no movement from the bubbler (I have a stainless steel fermenter with heater from kegland set at 16C). Can you please let me know if you think I have underpitched, ie, should I have used 2 x 11g packs? By the way he abv of the NZ pilsner is around 5%. I thought there would be alot of movement in the bubbler or am I comparing the novalager too much to a kveik yeast? Any thoughts? Thanks again for your videos 👍
I found little airlock activity (I use a three piece airlock). My first batch at 16c used one sachet, another at 12c used two. Both came out fine. This is a lager strain and I found the krausen was much lower than with an ale yeast. Maybe at lower temps there is not the same vigorous activity you find in ales. Best is to wait a day and take a hydrometer. In my three batches to date, the reading dropped on average 10 points per day.

I just looked on the Lallemand website at the pitching rate calculator and when I put in the information required to calculate the rate, they confirmed that I should use two packs. Luckily I had another pack and so I pitched that too. However, I wish I hadn't, cos there was definitely activity in the fermenter (you can't see anything with a steel fermenter 😔) with plenty of krausen on top and around the sides. So, I may have got away with one packet. Starts getting expensive when you're advised by the experts that two packages of 11g are recommended. I think the Malt miller alluded to that in one of their recent videos, that 2 packets will be the minimum necessary/needed for a full fermentation of 23L wort. What's your thoughts?

Mouth drooling again! Dry january cant end soon enough. The novalager looked top of the pops!
It's a yeast definitely worth exploring. It's a shame it was with this kit.

I also use a 3 piece airlock, I wonder if it might help to change back to the basic S bend air lock?
