Only needed 1 cup of whipped cream for my 9 inch pie. Used 150 ml key lime juice, 80 gr of sugar (comes out on the tart side), 5 egg yolks, and only 1/3 cup of sweetened condensed milk (I am not too fond of overly sweet desserts - I also skip sugar in graham cracker crust). It was fantastic!
My daughter and I slipped into our WDW resort to try a little keylime pie with afternoon tea...our eyes meet and we knew we had found a new fav pie...happy times...
Which resort had the pie? Curious.. growing up my parents and I were always in the hunt while in Disney- our fav was in the grand Floridian. Their more upscale restaurant. When I returned two years later- GONE diff restaurant no good pie. Haven’t had one anywhere that’s good- well amazing. I’ve googled yearly nope. Found a few favs in the keys!! Also I love chef Jean pierre( his recipe) the crust he makes is a little too much but the filling was incredible!!
I'm from Sweden and read a magazine where they presented a few "Classic American Pies". The Key Lime Pie caught my attention, but I thought I'd better check an American recipe to be sure it's done right. And who would be better than Martha Stewart! The recipes were actually quite similar, but Martha, yours is a notch better, so I will follow your instructions. Looking forward to making it! Now our oldest son is getting married and I am about to bake Key Lime Pies for that day in honor of him growing up there. Of course we dont have the real key limes over here. We had a Key Lime tree in our backyard when we lived in Florida. They are not green, but rather yellow. I gave bags and bags away to my friends. It was great in ice tea and of course, Key Lime pies.
When I was visiting Key West, several years back, I saw pieces of frozen Keylime pie on a stick. Then they were dipped in dark chocolate. I will be making your recipe with limes from my yard. I’m so excited because you make it look so easy Martha. Thank you. I will say I’m tempted to hard freeze is thin slice and try dipping it in chocolate. It’s midnight and now I’m hungry… Ayyyyy!
I made it…haven’t tasted it yet, but it’s sweet so nothing could be wrong. What I did for the topping was use those egg whites to make a meringue, instead of the cream. Martha has an eye for everything she touches. Her eye for style/color/design etc. is unmatched (I could say for let’s say linens, but there is so much more!).
Love Martha just to mention the bake time for my pie at 325 F was nearly 30 minutes to get it to set. At 17 minutes as recommended the center was still cool and not at all set. But after it came out was yummie!

Hmmmm...keylimes are ripe when they are yellow in color. Also, they ripen on the tree late October early November. I would say it is a nice once a year Fall treat!

Anything you do is sweet, but a friend got me a souvenir from key west a while back from a place called the Blond Giraffe, and it was a key lime pie and I was in heaven for days I became very crafty on hiding it it's easy when you put chocolate in front and change the container in the icebox :D
