Key Lime Pie
Makes one 9-inch pie
CRUST
6 ounces (170g) graham crackers
4 tablespoons unsalted butter, melted and cooled
2 tablespoons granulated sugar
1 large egg yolk
½ teaspoon Diamond Crystal kosher salt or ¼ teaspoon Morton kosher salt
FILLING
1 tablespoon freshly grated lime zest
5 large egg yolks
1 14-oz can sweetened condensed milk
¾ cup fresh lime juice, strained
Pinch of salt
1 teaspoon vanilla extract
TOPPING AND ASSEMBLY
2 ounces cream cheese, at room temperature
2 tablespoons powdered sugar
1 cup heavy cream, chilled
More fresh lime zest, for serving
PREHEAT THE OVEN: Arrange an oven rack in the center position and preheat the oven to 350°F.
MAKE THE CRUST: Place the graham crackers in a resealable bag, press out the air, and seal. Use a rolling pin or heavy-bottomed saucepan to crush the crackers, periodically shaking the bag so the larger pieces settle to one side, and continue to crush until you have very fine, uniform crumbs. (You can also pulse them in a food processor until finely ground, but it’s very doable by hand.) Transfer the crumbs to a medium bowl and add the melted butter, granulated sugar, yolk, and salt. Toss with a fork until the mixture is well combined, then rub the mixture with your fingertips until it looks like wet sand.
PRESS IN THE CRUST AND BAKE: Transfer the mixture to a 9-inch pie plate and scatter the crumbs evenly across the bottom. Use a straight-sided glass or 1-cup dry measure to very firmly press the mixture up the sides of the plate and across the bottom, flattening it into an even layer. Place the plate on a sheet pan and bake until the crust is fragrant, firm to the touch, and dark brown around the edges, 8 to 12 minutes. Remove from the oven and let cool while you make the filling.
REDUCE THE OVEN TEMP: Turn the oven down to 325°F.
MAKE THE FILLING AND BAKE: In a medium bowl, combine the zest, yolks, sweetened condensed milk, lime juice, salt, and vanilla and whisk until completely smooth. Pour the filling into the pie plate and smooth the surface. Transfer the pie back to the oven and bake until the filling is set and just a little wobbly in the center, 15 to 20 minutes. Remove from the oven and let cool completely at room temperature, about 1 hour, then transfer to the refrigerator and chill until cold, at least 2 hours.
MAKE THE TOPPING: In a medium bowl, combine the cream cheese and powdered sugar and work the mixture with a flexible spatula until the sugar is completely incorporated and the cream cheese is smooth. Switch to a whisk and slowly dribble in a couple of tablespoons of the cold cream, whisking to incorporate. Continue to slowly add the cream, whisking constantly to prevent lumps, until you have a thick, smooth mixture, then whisk vigorously until you have a softly whipped cream that forms medium peaks. Remove the pie from the refrigerator and scrape the whipped cream onto the surface, spreading it nearly to the edges. Return to the fridge and chill just until the topping is set, at least 15 minutes.
SERVE: Top the pie with fresh lime zest, cut into slices, and serve.
DO AHEAD: The pie can be baked and chilled (without the topping) 1 day ahead. When it’s cold, cover loosely with plastic wrap, then top within a couple of hours of serving. Any leftover pie will keep, covered with plastic, for several days in the refrigerator (the crust will soften over time).

Harris is such a mood, I'm sure he's just doing home things in a typical old stained Tshirt, but always gets asked to come into camera. The color changing was hilarious.

I really like how Claire is always conscious of not making it too sweet. Sweet is good, sure, but it has to be in balance. And it's real easy to make things too sweet.
I feel like it elevates and differentiates the desserts, especially the more simple or traditional recipes - like classic diner pie versus a professional pasty chef's.
I made her banana read for my wife. She (my wife) loved it partly because of that.
I love a little something sweet at the end of a meal but hate overly sweet stuff. I love that Claire is a chef who balances flavor. I don't have to worry about adjusting her recipes for sweetness. 😊

I just made this recipe today! The cream cheese was delicious in the whipped cream! I did add a tiny bit of vanilla extract to my whipped cream but that's just personal preference. Very happy with how this whole thing came together

Omygod. Thank god YT recommended this! Love watching Claire and also tarts are probably my fav dessert especially lemon/lime tarts. You get that toasty crunchy base and the main flavour in the middle and that cream on top balance the sweetness and tanginess. I want a slice now and with english tea 😭😭

When fresh key limes are not available I use Nellie and Joe’s key lime juice but I would never personally use a Persian lime in a key lime pie, but of course I am a Floridian so it’s more important to me than others. I am interested in trying Claire’s topping… it looks like a yummy addition.
Yes!!! Persian limes completely change the flavor. They aren’t the same at all.

I'm a born and raised Floridian and was looking at her recipe like "where on earth are the key limes though?!"
I grew up in the Keys.. when the Internet was this new thing we didn't use like we do now. I learned many slightly different Key Lime Pie recipes from my elders. Persian limes will never touch my pies, and Nellie and Joe's is absolutely the way to go if fresh Key Likes can't be had.😁
Was told they don't grow the key limes in the Florida keys anymore. Grew up in Arizona key limes were called Mexican limes. So if you see Mexican limes in the grocery store they are the same as key limes. Don't know I it would taste with Persian limes

I watched this video the day it was released, and made the pie for a family dinner that weekend, and oh my god was it ever delicious. I cut back on the juice just a smidge because I was worried about how tart it was going to be, but I totally could have added all of the juice, and will next time!

I have made this twice for the holiday season and it's always a hit with my family. The incorporation of cream cheese for the topping is brilliant It gives the look of a meringue without the hard work. I also added some salt and vanilla to the topping.
Love all your videos. I will be trying this recipe. Last pie I made I drizzled a blackberry coulis over the cut pieces of pie. I recommend either a blackberry or a raspberry coulis drizzle.

This my family’s Christmas dessert. The acidity is perfect for the end of a rich meal. We fought over Christmas desserts for years and key lime pie was the one dessert we could all agree on.
This is super similar to the recipe I use for my key lime pie. I use crushed gingersnap cookies and cinnamon graham crackers. I add a bit of grated ginger into the mix (only a lil bit!) and the zest of 2 limes. I definitely want to try it with the cream cheese whip topping! I usually just do some lightly sweet whipped cream but that just sounds incredible. 🤤

The whipped cream was delightful!
A tip for the whipped cream, USE ROOM TEMP CREAM. it whipped up by hand to stiff peaks in less than five minutes! Cold cream takes at least twice as long to whip, and you don't have to worry about the cream cheese locking up from the cold cream.

I just made 2 key lime pies this evening for my wee Mamma's birthday tomorrow. Obviously, being in Northern Ireland, key limes are not a normal ingredient that we can get, so it's normal limes for my pies too. My recipe is pretty much the same as yours, but I add 50g of desiccated coconut to my digestive biscuit crust and no added sugar as digestives are sweet enough. And of course, plenty of fresh whipped cream too, Lee :)

Different approach but this reminded me of a key lime dessert story (recipe described below tale). It involved lime curd & I've got a roughly 60/40 success rate w/curds generally. This turned out & I was so proud/excited! No one cared - they got so hung up on my using nilla wafers instead of graham crackers, the lowest effort part lol 🤦♀️
I had to make dessert well ahead & pace steps out. So I made a lime curd 1 day so I could focus on that, then made a no bake cheesecake another day. I layered in half the cheesecake filling, folded the other half with some curd for the second layer, & topped w/ remaining curd. Put the whole thing in the freezer so day of, I could just move to fridge & top w/ whipped cream.

I make this pie only once a year on my brothers birthday, I think I'm more of a "only one bowl" kind of lady, more steps than that are way too many steps, but I try to step out of my comfort zone sometimes. Love from Chile!
Speaking of great American citrus pies, I highly recommend East North Carolina Lemon Pie (which has a Saltine cracker crust!) and Sour Orange Pie (which is a real Floridan pie). Both are so so so good!

Once again (as an Australian), I'm ridiculously fascinated by the concept of yet another (culturally unfamiliar) dessert recipe. Subjectively speaking, lime isn't my favourite citrus fruit, but (given the opportunity) I wouldn't hesitate to try (or bake) key lime pie, (if nothing else) to determine the actuality of my indifference towards the aforementioned citrus fruit. This was delicious, I didn’t think I’d like it because I’m not the biggest fan of citrus desserts. But this is definitely something I’d make again. It was easy too.
Thanks for a wonderful video. I made key lime pie 3 times recently and on the last one, used the whites. It diluted the flavor a little but I thought it was ok. But I will definitely try yours. What is your opinion on including at least some of the whites? Also glad to know I can use regular limes. I've been using the bottled juice but I'm sure fresh is best.

I make a mix of sour cream and sugar(just to taste, thin layer)and that gets spread on the top for the last 5-10 min of baking. Gives a nice contrast to the custard.
