My recipe is similar to cooks illustrated but, instead I use 5 egg yolks and 3/4 cup of "Nellie and Joe's" key lime juice. I get a little more pie filling and slightly more lime flavor and tartness. Sometimes If I want to keep the calories down and a little lazy I used a premade graham cracker crust. I've even used non fat sweetened condensed milk and there's very little difference from full fat. I don't use zest. Thanks for the recipes.

(PEPE'S) that one was the most intriguing, like i wanted to reach in and try it. other than that, the sour cream and cream cheese options sound like they'd be a lot less hassle to make. the sour cream one having more keylime flavor makes me think it'd be the one to try first. overall, i like the pie to keep its shape, no matter the type - like the first several flan-y ones vs the denser egg-free ones.
Kind of wish you had tried Kermit's recipe, but maybe one of these had it. Give credit to you for making all these. Everyone has a different preference of what is good from tartness, texture and then it comes down to crust and filling to crust ratio and then knit picking the whip cream.
I wish the recipes were a little more different than each other. Maybe some browned butter graham crust, meringues, or even cream cheese/key lime cheesecakes. Anyway, the production quality was high
I thought it was like, a very comfortable pace of speech. Worst case, slow down the video to .75X cause UA-cam had it so that the pitch is the same? Idk, but it was a very normal talking rate

I'm not sure any really had a chewy/caramel-y filling tbh...Divas Can Cook probably is closest to being "chewy" but leans more creamy.
