- How to make an Overnight Dough with one proof only. Prepare at night and bake in the morning. Proofing will be in room temperature.
Here's what you'll need:
1 cup warm water (250ml)
1/3 cup sugar (65g)
1 tsp salt (5g)
1/4 tsp instant yeast (1gram)
3 cups bread flour or all purpose flour (375g)
1/4 cup melted butter (60ml) Unsalted- Skip salt when using salted

This is a simple tips when you make an overnight dough. You can pre-made the dough by using cold water then simply refrigerate your dough-bread right after as it can slowly proof inside the regenerator then make sure you to have it at room temperature for at least an hour before baking and there you can have a fresh delicious dread in the morning for breakfast! Take note if you simply leave it at counter top room temperature your dough will collapse as it will over-rise due to the presence of yeast.

Hi this is my 3rd time trying the recipe and all three times I failed to rise my dough. The first time I failed I thought it was because I only covered the dough with cloth, the 2nd time I thought my yeast was dead and now my 3rd time trying, I covered it up properly and used newly bought yeast and still my dough did not rise. What am I doing wrong? Is our room tempt too cold? I live up in Baguio btw.

Hello po thank you for the recipe ... this is the first time I'm using this recipe but I don't know what I did wrong with it ... I tried to make it today but did 2x of the recipe so I have more pandesal.. but my concern is my dough that I made was to sticky I hope it will come out perfect after the overnight proofing 🙏 so I can stay use this recipe .😊
One cup of water is too much for 3 cups of flour. I tried this recipe and ended up with an extremely sticky dough. I adjusted the recipe using 3 and 1/2 cups or 420 grams flour to 3/4 cups water.
If i do the overnight proofing, do i also do it in the counter or in the fridge?

I'm using your method but I tweaked the recipe a bit. Instead of 1/3 cup of sugar I used 1/4 cup and 1/4 or 2 oz of canola oil. I also added 105 grams (1/2 cup) of AF since it got too wet and sticky if its only 3 cups of AF. Hope it turns out well.
