St Patrick Day Dinner. Corned Beef and Cabbage with Barry Quinn

- Barry Quinn has perfected his recipe and technique for cooking Corned Beef and Cabbage over 40 years in kitchens big and small. Many friends have enjoyed this traditional dinner in his home on St. Patrick's Day and thousands of dollars have been raised at Community events on St. Patrick's Day or Christmas in Killarney events.
For the 2nd year during COVID there has been no Paddy's Day Celebration, but you can prepare Corned Beef and Cabbage with his tried and true method recipe, not just on St. Patrick's Day but 360 days a year.
Recipe
4 lb. Fresh Corned Beef Brisket
2 onions sliced
2 cloves of garlic minced or chopped fine
6 whole Cloves
2 Bay Leaves
12 small potatoes with skins (prefer red potatoes)
1 head of green cabbage cut into wedges
1 tsp salt
1 tbsp pickling spice
Method
Bring to a boil water in a Dutch Oven place the Corned Beef Brisket, add onions, garlic, whole cloves, bay leaves and spices. Bri g back to slow simmer, cover and simmer for 45 minutes per pound of corned beef till fork tender. Remove from Dutch Oven and wrap with Aluminum Foil, with a 1/2 cup od Cirned beef liquid. Place in slow oven in pan at 200° f.
Bring corned beef liquid back to a boil and add Potatoes to liquid, cook for 10 minutes and then add Cabbage wedges and simmer till cabbage and potatoes are tender. Potatoes will pierce with a fork, about 25 minutes more.
Cut Corned Beef across the grain for best results.

Yes! Finally a video showing the correct way to make a boiled dinner - just like my Nannie made it. We grew up on this meal. Sunday dinners were either roast beef, pot roast, boiled dinner, or roast lamb. I miss those childhood days so I recreate them for my children. Thanks for sharing! ☘

We have fun doing this. My dadvwould cook for 100s before lockdowns. Not being social was hard on everyone. This helped to break the monotony, and fight depression of being isolated. We figured we could share this with UA-cam and spread the good word.

Red potatoes have the least amount of starch which is why they work so well.

Is there a substitute for pickling spice? How much liquid should be in with meat
Pickling spice is definitely the best way to go but you could substitute;
Mustard seed, bay leaves and pepper corns.
The water should cover the fresh Brisket.

Is your corned beef tender? I've seen so many recepeis that are tuff and fatty.
With this method of cooking the corned beef turns out so tender, and real nice.

I just have a couple comments that I use on mine. Before starting to cook I lightly score both sides of the meat into my slices ( against the grain). I have a Pampered Chef stone cooker and cover the meat foil and braise it in a half bottle of Guinness ale then place my. Unpeeled Yukon gold potatoes
Carrots. Shallots and cabbage and a packet of au jus gravy mix on top of the foil and pour the remaining ale over everything. Get a good tight seal and slow cook for at least 5 hours at 300 degrees until everything is fork tender. But then I save any leftover liquid to use as a base for some

Works great every time
Is there any benefit for baking as opposed to boiling?
Of all the times I have done this I have found that boiling the corned beef helps to infuse the flavors of all those spices, and keep the corned beef nice and tender. When I've baked it, it seems to dry it out more, even on a slow roast.
Now you can use all of that rich flavourful water from the corned beef boil to boil your potatoes and cabbage to make them real good too. This puts you at a huge advantage.
You wouldn't want to lose all those real good flavors.

@@jaqueque2726 yes, thank you! I bought a corned beef today and will be cooking it soon. It is the flat part of the brisket and I prefer the fatty end but could get only what the grocery store provided. I love to cook vegetables in the seasoned water as you suggest.

I have to thank again for your comments. My dad would make this meal every year for hundreds of people for St Patrick's day events for as long as i can remember. When the pandemic happened and everything was locked he really missed reaching out to the community and doing this for people. We both got together to make these videos to continue to share the recipe with people that would enjoy it, and share it with their friends and family. It's mostly a family tradition that we have tried to continue to keep strong and we are happy to share it. I hope you and your company enjoy it too.

@@jaqueque2726 I cooked the corned beef yesterday and it is great. I really want to make hash and have everything for that plus decent rye bread for sandwiches. My father would get canned corned beef when I was young. Thinking of his army days I guess
