  • This is NOT YOUR MOM'S Boiled Corned Beef and Cabbage. I'm going to cook mine on the Weber Kettle Grill in the Lodge Cast Iron Fish Pan. I'm gonna' sear it off and then roast the cabbage and onions. I'll Braise the dish with some BEER until the Corned Beef is 203 degrees internal with some aluminum foil on top. Let it rest for 10 minutes and this will be the BEST CORNED BEEF AND CABBAGE YOU EVER HAD.

    It is about the method. Whether you do it on a grill or a stovetop or a crockpot, it is still a braising method. You still boiled it on your grill. The two things I like with your way of braising is searing the meat first and you added a smoke level of flavor, but the method is still the same. Very smart. Now when I cook mine in the crockpot because of convenience as I am busy, I will sear the meat first but I can bypass the smoke element although I will try this sometime.

    I love the little seasoning packet. I add in a few bay leaves too. Some people also add mustard seeds & garlic too.

    Excellent recipe. Take a camping trip.every year. 3 of us make one. I used this recipe and sold the show. I brine my own corned beef and use a spice bag.

    Two years ago I stumbled across a roasted corn beef and I'll never go back to boiling. This year I'll try it on the grill. Also another great thing to do with the roasted corned beef is to make Irish tacos, yes you read that right. One of the best taco's I ever made! This St. Patrick's day we're going to do them again with your corned beef recipe. Thanks for sharing.

    Looks real great. All ours was boiled after a sear. Potatoes onions cabbage was last. The broth was so good.

    Used this recipe for St. Patrick's Day. My wife loves corn beef and cabbage. I started the meat and onions on the grill in a big cast iron skillet and brought it inside to finish off on the stovetop. I also added potatoes and carrots! The corned beef was tasty and tender. Best we've ever had!

    Love the video...although replicating it would be easier if I knew the timing. I hate taking the lid off any more than necessary because you lose the heat.

      Guess you have to put a digital temp sensor in it and go by internal temp. He does mention 203F so, maybe? Dunno.

    I'm from the east coast of Canada. They call it boiled dinner there or Jiggs dinner.
    "Jiggs" comes from the old comic strip "Bringing Up Father"
    with Jiggs and Maggie as the main characters. Salt beef dinner is Jiggs' favorite and, although Jiggs was a poor laborer, he won a million dollar lottery but still longs for his old habits and food.

    Need to mention the timing and the temps as you were cooking. That CB has cooked a while before the cabbage was added. The cabbage would burn with a temp at 500. The meat was 169 and target is 203 which most likely took 45min. The cabbage looked just limp at the end

    Thanks for the vid. My momma never made this growing up, but I just made my first one ever on the stovetop last week and it was delicious. I watched a UA-cam vid for guidance, then your vid autoplayed after that one. This will take my corned beef game one hundred levels up from what I made lol.
    I’m not much of an alcohol fan, so what would you suggest I use as a substitute to the beer? Cheers.

    Lay a large sheet of foil on the counter top. Place the corn beef on it. Sprinkle a LOT of pickling spice on it. Wrap the corn beef up
    in the foil real tight. Wrap it up again in a large sheet of foil. Try to seal it good so no juices run out. Place it into a metal baking dish.
    Put it into a 325 degree oven and bake for 3 and 1/2 hours. While it is cooking enjoy your Irish Harps beer. Been doing it this way
    for 40 years. Fool proof recipe.

    I haven't made corned beef and cabbage in over a decade and came to UA-cam to get some ideas.... All I saw was boiling it in water for 2 or 3 hours and it looked disgusting. THANK YOU! I'm currently cooking my corned beef and cabbage with your recipe and it smells DELICIOUS. I've got it in a cast iron Dutch oven on the stove, it seems to be working pretty well. THANK YOU for the great ideas and the rescue from the boiled meat!

      Start at 400. Once you cover it, turn it down to 325. Thanks for watching.

    What size was that flat, and what did your cook time come out too on that? Looks awesome. Have 2 corned beef I'm gonna give this a go on this weekend. Don't have that awesome Fish Pan, so I'll sear them off and cook the onions on a Lodge griddle I have, then move them to a large hotel pan to braise in. See how that turns out!

    You made a new dish! At least one I hadn’t seen before. Since “corned” means salt brined the brisket is corned before cooking so I guess the cooking method is up to the cook! It looks great. I’m making corned beef and cabbage for Friday night and boiling it the traditional way. I have a second brisket brining that I will put a rub on and smoke the corned beef which makes it pastrami. Yours is a braised corn beef, you should name it!

    Well, that is different, I live about 5 min from the very best Irish Pub in CT on Saint Paddy's day they will serve up about 2000 lbs of Corned Beef and Cabbage. They do it right. Colmans Mustard and a pint of Guinness. And what is even better I can get Corned Beef and Cabbage any time I want too! I am going to have to try your version. It looks like it could become my very favorite. The Funny thing is that this is pretty much an American with a Polish/Russian Jewish twist. The Irish in Ireland never saw any beef to speak of but they did see what the Jew did with brisket in NY in the mid to late 1800s and well it got adopted with the usual root veggies add on's Oh and Katz's Deli is still there since 1888! They really do brisket. I do draw the line on Green Beer thou!

      Yep... I'm Irish (actually Irish, born and bred in Ireland), corned beef is not a thing, the traditional dish is Bacon and cabbage. The bacon is more like ham than the crispy type you have for breakfast.

    Can I just say that "corned beef and cabbage" is NOT an Irish dish. I don't know why Americans think it is, but as someone who has lived in Ireland for over 50 years I've never heard or eaten it. Neither have my parents, my grandparents or anyone I know.
    I suggest its an American invention. Listen: you keep it. Enjoy it. Love it. Just don't attribute it to us.

    You WILL take down, wrap up and send me that three legged deep dish skillet you have hanging on your kitchen wall along with any cast iron muffin pan (for making Yorkshire pudding) you may have. You know this to be true so JUST DO IT!
    I've coveted one of those for years now and am quite jealous that you have one and I don't. Thank you.

    Looks great, makes me want a taste. The only complaint I have is your music is too loud. I'm hard of hearing, so the music drowns out what you say. Now I do like the music so I'm not saying to get rid of it. Just lower the volume. Also, it isn't just your channel, I have the same problem with other channels. Some have lowered their volume some haven't. It is your channel and your choice and I respect your decision. I'll still watch your videos.

      Hi Steven. If the music is too loud, it's becasue you have you music emphasis turned on on you device. I am very careful to edit these videos with headphones and the music is always in the background except where tactically place. Check your settings. I can not control that. Thanks for watching.

All I have ever used is the volume up/down on the side of the phone. I will say that it isn't every video that does this. I guess I will just have to live with it.

      I use the Window Live Movie Maker software that came with my 6 year old laptop. They don't support it anymore and when I have to upgrade, I will have to learn all over again. That won't be too far in the future. I bought Adobe Premier, but it won't run on my "old" computer.

    Crock Pot 8 hours. You will never ever have a better corn beef. Boil potatoes and carrots alone. Then I steam my cabbage cut into wedges. Done Set and match. Bottle of Kens Russian Dressing. You could ask for no more.
