First time I had corned beef... My mother and I were at a Fred Meyer grocery store. Albany Oregon. My town. She bought a big brisket and I asked her why when we have two freezers full of beef. Our beef. I'm 7 years old at the time.she explained that she was working long hours and didn't have time to put together how it's done the proper way. To this day my mother makes it the proper way. As a kid growing up in Ireland, I don’t recall ever having eaten this. It was the first thing offered to me on my first trip to NY in the 80’s, I liked it. Never had it again until last week . Followed K and S ‘s recipe, 👌🏻☘️🇨🇦

I do love corned beef and cabbage. Never have pickled a fresh brisket though. Yum!
Here in Brazil what we call corned beef is "Sun's Brisket" (sounds cool in English). 'Cause we dry 'em in the temperature, mainly over our Northeast area.
Pickled anything's no longer "fresh"... you know, right?! Chef Gordon Ramsay strongly agrees.

Looks great Kent! I love corned beef sandwiches. I'm concerned about your upcoming visit to Denver. We went from 2 people with CV-19 to 33 confirmed cases in a week. I'm not one that's prone to panic fanned by the media but it's starting to look serious, many events are getting cancelled. I hope things change for the better soon, I'm just one of the 925K people in your family but I really wanted to thank you personally for the ray of sunshine you've brought into my life since my wife passed away.

So cute - I do appreciate how Kent does his research and comes up with authentic information. I could never understand why people ate Corned Beef & Cabbage for St Patrick's Day, in USA! As I'd never heard of that in UK! So that was a lesson there, thanks - and also why it doesn't have to be red! I only just started cooking corned beef last year, and they sell it here ready to go - but it is pink - now I feel inspired enuf to have a go from scratch! Looked very good, as it was Beagle-approved, for sure! Have a Guinness Kind of DAY!

I am eating corned beef brisket leftovers while I watch this! Perfect timing! My wife made it Tuesday night and it is delicious. She uses an old family recipe that everyone loves. Seriously, we have those gun toting racist cowboy type stereotypes floating around. And I personally don't know if its true or not. All I know is, you seem like a cool cat, a straight up down to earth guy. I don't know if you will ever see this but I want to let you know that you dispel all those negative stereotypes, you seem like a wholesome guy who just loves cooking and spitting knowledge. You have taught me so much about history and food. I have even tried to personally cook your recipes. I absolutely love your channel and I wish you nothing but the best! Keep it up.

Dear Cowboy Kent,
this video reminded me of my late, great uncle Arthur. who was an old time butcher, i.e., he slaughtered his own beasts and sold the cuts in his shop.
As far as I can remember, he only used salt and sodium nitrate in his brine. This meat would be good for weeks.
Apart from him surviving being shot in WWII, his habit of drinking tea from his saucer and his fluency in Anglo-Saxon English when others disagreed with his personal philosophy on life, his sausages were a personal favourite, until I saw how he made them.
Your recipe is similar to colcanon, a much enjoyed dish prepared by our Irish landlady when I was living and working in Liverpool in the 1970's, although the lads tended to use Guinness beer in the pub rather than in the pot.

I do corn beef quite often in a crock pot, with cabbage and potatoes. Been doing it for *MANY YEARS* But never had it turn out brown.

I am so happy you left out the Sodium Nitrate(pink salt). This is the way I make my corned beef or after the brine, I smoke it and make pastrami. Folks have been curing meats for centuries without using Sodium Nitrate. I have been curing my own bacon for years and have never had a problem. It is the best bacon ever. Thank you for keeping the original methods alive.

here in the Philippines we only have the canned catfood corned beef variety..and it taste amazing lol
Well the best Corned Beef and Cabbage in the State of CT is at The Inishmor Pub in Colchester, CT, I am about 3 min walk from them right now and its where I will be on St Patty's Day, they will do 2000 lbs of corned beef on that day. What is even better is that I can go have it any time I want to, life is good. Don't forget the Colmans Mustard.

Slice thin, place corned beef on sliders with horseradish sauce thinned with mayo. Then add cabbage and pour melted cheese over cabbage and serve. Big hit.

Watching the Beag go after that corned beef reminded me of the time my husband put half a rack of raw ribs on the kitchen island and our mutt grabbed 'em and tried to run. They went round and round till he got them back. Then he rinsed them off and threw them on the barbeque. (He ate them all by himself though.) Thanks for the laugh and the corned beef recipe. I'm not a big corn beef fan myself, but I can eat it in a pinch 🙂
For about the first four or five briskets I corned, I omitted the pink salt (Prague Powder #1 NOT #2) and in the end I found the color and the flavor more to my liking. But as always with your recipes I like what you do. In this case I really like your recipe for pickling spice. better than the stuff in a jar.

Don't put the cabbage in until 10-15 min when it's done and it won't be soggy

A friend of mine swears that only corn-fed beef can be corned beef. I tried to tell him exactly what you said, and that even grass-fed beef can be brined, and "corned." He still believed otherwise, so I just gave up.
