naya s. It’s all in his delivery. He doesn’t even have to be telling a particularly funny joke(although he usually is) but the way he says it makes it funny.

Not to discount his abilities as a comic, but all talk shows are pre-planned and usually rehearsed. If you want a good example of this look up "Conan Steve Martin scraps" on UA-cam. You'll see how they do a quick run through of a segment well before they record the actual interview. Pretty much all talk shows follow this setup.
Practically speaking putting on a big show like this has a lot of moving parts and it's too expensive to pay everyone there for hours to get enough usable improvised material for a televised interview.
