That's what we call white ketchup. Gonna make some soon. Many stores have those rib roasts on sale right now. Very inexpensive. I buy a two rib to rotisserie and a 4 or more rib and have the butcher cut into steaks for the freezer. Very delicious.
@green_lt3 - so they can cut presumably cut meats.... but it doesn't make them a chef. Although, interestingly, GR can certainly handle being a butcher.
Lower the cook temperature and you can cook it for as long as you want and it will get more tender. Thats the same principle as smoking and braising meats. High temps and cutting the wrong direction are what cause meat to get tough

And at the regular, every day grocery store in the US, they won’t do things like that if you order one or even grind up meat for you anymore. uh... was he trying to cook it to Medium? 'Cause that's what it looked like... for such an expensive cut of beef, I consider that shameful (oven temp was too high and/or his thermometer is broken or set to celsius). Ps: imho, that bone would be better utilized if tied to the roast for cooking.
