Indian here. I'll give you a small suggestion. You need to fry the powdered spices in ghee for 3-4 minutes just like the hot paste. Unless you fry dry spices in fat, the flavour doesn't 'bloom'.

I don’t think he wants to make it too spicy, I get that Indian food is super spicy and it’s delicious Allahummabaarik, but Arab food tends to be less spicy and adheres to different tastes, also he’s prepared in this field but I may be wrong, great suggestion though,
