whats fine dining about this? putting herbs and leaves on it? a commis/homecook can replicate this without much effort and dish can easily be executed in a cafe/bistro *edit* so chefmajk replaced "fine dining" with "the ultimate" in his title lol

Because I had it at home at the time, probably. Easy as that. There is no difference in them.

I think he is always using powdered sugar, but for most recipes, regular cast sugar is fine
