Nigerian Buns: Easy step by step guide for beginners(detailed, 2023)

- Nigerian buns stand in the class of street food like its closest sibling, Nigerian puff puff. Unlike Nigerian puff puff, one requires some level of skill sets to nail a typical Nigerian bun. I am not ashamed to admit that I have failed multiple times before finally getting a hang of it. I want to share with you ways that I have come to learn how to make this street snack delights in the comfort of my home and I believe even as a beginner, this will hopefully drive you in the right direction. Amongst others, One of its positive, as opposed to Puff puff, is that it does not take time to make from scratch.
Nigeria buns are sweet packed with flavor with a crusty exterior and chewy interior. The level is dependent on how much sweetness you desire.
Full ingredient list(Guide)
Dry:
4 cups all-purpose flour
2 1/2 teaspoon baking powder
½ teaspoon salt
½ whole fresh nutmeg(grated)
½ to ¾ cup of sugar
Wet:
3 eggs
3 tablespoon melted butter
1 teaspoon pure vanilla extract(optional)
¼ to ½ cup of water

What type of cup do you use in measuring your flour, it should have been better to tell us how many grams not by cup

please can i use Golden penny easy bake flour to make buns,,though it's written on it's bag FOR BAKING BREAD i want to knw if it will turn out good wen i use it to fry buns....thanks
I had to check the flour out cos I am not familiar with the brand.
I found out it was bread flour. If that information is true then you will not be able to just substitute it directly . That is 1g of plain flour is not same as 1g of bread flour.
If you have a weighing scale with you that measures in gram you will have to do a little maths. Here is the conversion formular:
1 cup(155g) all purpose flour = 7/8 cup(140g) bread flour.
You will need to just do the little maths to convert the quantity you will need. I have never substitute bread flour for this recipe. BUT I should think it is worth the try. If you convert n use the amt you should I should think you will be fine

Hey Dearie. I have not used oil instead of butter before. However, I will say with a certain of confidence that you surely can replace the butter with oil. Maybe i will try it out one of this in my house as well hahahaha. However, just speaking from logic not experience on this particular buns recipe , i will say butter naturally add a richer flavor to anything it is added to. that said, i will think it will be more flavourful with butter. Is there any reason for the substitution if I may ask?
Thanks for the teaching. ma in the process of mixing you removed from the dry ingredients. after turning the wet ingredients to mix with the dry ingredients the last flour you poured to thicken it was it also from the dry ingredients or another separate flour.

Yes you are correct. when you whip up egg white you are forceful stretching the protein in the egg white. this protein stretch and as it does that it wrap up gas(air) and make it very fluffy.
Yes it is used for batters such as cakes . However, this buns batter is thicker than cake so I don't really see the need. BUT that said, you can try it out and who knows you might find a difference😊....

Please I want to ask a question when making buns must I use butter
Hi LUchi. You will need a form of solid fat for this pastry. You can use margarine,shortening if you dont want to use butter. Now I have had someone ask me of one can use liguid fat e.g. vegetable oil for it. In all honesty I dont have an answer to that because what I have always used is solid fat and butter been my most preferred cos it adds extra flavor to the buns.
You can try and use liquid fat whose advantage in pastry is to get a more moist pastry and see if it works out. Maybe in future I shall experiment with that.

The most accurate way will be to use a cooking thermometer. Any other way, is a trial and error. I invested in a good kitchen thermometer so that is what I use

Here is the thing, I dont know if you missed the part i mentioned in the video that the full list of ingredient used is in the description section. For all of my recipe videos I always put a full ingredient list in the description section. That way, i address some other people complaint of the length of the video. @@Celestial_Starr then there is probably a fundamental error. Did you take really deflate the mixture before frying and is you measurement precise for denser dough than puff puff

I made it for a family gathering using
3kg flour
4 spoons of baking powder
1 spoon Cinnamon
1 egg
1/4 cup of butter
Salt to taste.
So sorry for asking alot, my family really loved it they all just complained about the oil, therfore I'll really appreciate any advice as to what I can do better.
@@Celestial_Starr can you please watch my video on baking ratio. It helps to know if your measurement is correct with pastries and baking. That should help you even scale down or up your quantity.

Watery?? Did you follow the video to the 'T' and follow all the tips shared in the video?
By watery do you mean doughy and not cooked inside? If yes, this is rarely a case for bun more for puffpuff. So what you xan do is lower the heat of your oil and fry for a longer time.
