Small advice, the bread pans should be stored at least 6 inches above the floor, you can build wooden palettes and place the pans, never directly on the floor, the inspector can fined you
The mixer is narrow but maybe you could reduce the batch production by half. I use a 50kg mixer but can’t mix more than 37.5kg. So there is space. Mixing is back to back so no time to be helping the mixer to do it’s job. I love your bread color n the entire outlook of what you are doing. I wish that one day I can do a video. For now am still in the comment section. Wishing you more sales

Cool video, as a bakery owner based in Ibadan, I can only say our methods and recipe are as similar and different respectively.
Hygiene is critical. Please have your workers wear a clean latex glove. Germs in nails. Will be hard to eat this after seeing someone use their hand.

Please do you add corn starch to your bread,? If you do please,do still get it elastic after baked thanks
