    Love it; thanks Sisiyemmie. Cutting the leaves with a knife destroys the cell walls of the leaves releasing enzymes (polyphenols) that are responsible for the discoloration (brownish color change) we see when such leaves are cut with a knife. This causes an enzymatic oxidation just like you’d see with an apple left open to room air making the leaves brown and mushy. Hence why it’s better to hand pluck. Our mother’s may not have known science but their kitchens sure were science projects. But leave all that science jare, that soup looks delish. Lol.

    I know of three reasons why we tear Oha leaf in igbo land. The first is because it's a very delicate leaf especially when it's fresh and you don't want it to shrink or darken when it wilts in the hot soup. You don't even cook it for too long since it's not tough like ukazi and other leaves. Secondly Oha soups are typically lighter than other soups so the broadly torn Oha leaf helps you scoop, soak up and retain the soup broth when you're eating it. And finally, Oha soup is actually a delicacy. The leaves are not always available in fact Oha has it's season and the leaves must be quickly harvested while they're still tender, if the mature you can't use it (i remember climbing our Oha tree to pluck off the young leaves), so when folks cook Oha, they want people to see the "freshness" of the leaf in the soup.
    Igbo people, did I get it right or miss something? Igbo Kwenu!!

    I use knife to cut mine and my soup comes out very delish. Onions is not normally added to any Ede soup (cocoyam soup).Well done 😋

    Sisi I like that you went there, actually processing the oil instead of just using red oil. Most ‘ede ‘soup its sweeter this way.
    My mum advises you prep Ora leaf a day before using it. I really don’t know why o. Local soups n their methods. 😅
    Ogiri Igbo in that container thingy annoys me(Lagos n packaging)... Ogiri idemili 🙌🏽🙌🏽..

    Wow looks super yummy 🥰🥰. As a ghen ghen Anambra babe, I'll tell you for free that there's absolutely no harm with using a knife to slice your oha as long as you slice them only when you're ready for it to go straight into your pot immediately (this also applies to your uziza leaves else they'll darken and their flavours will begin to evaporate away) in huge chunks and as fast as possible. Also it's strange to me seeing onions in the same pot with a dish made with ogiri igbo. I've never seen onions in any dish made with ogiri Igbo. I wonder how it tasted.🤔 This looks super yummy though. Well done Sisi.💗

    Sisi, the story behind using our hand is that when you use a knife the oha vegetable tends to turn dark. So it's torn with the hands to prevent that. I've never tried to prove or disprove the theory though. Also, can I use canned banga paste as opposed to doing it from scratch? The soup looks amazing and yummy.

    I think this recipe could’ve probably done without the onions (we tend not to add them to the most traditional soups, especially where ogiri’s present) but otherwise this video’s amazing. Loved it.
