I own a family of instant pots, and the research I've read (maybe it has changed) said that the instant pot couldn't maintain a consistent pressure over time.......nor could they verify internal temperatures. Holland's Pine Haven, can you direct me to your data??? I would love to can in my instant pots.
I have a smaller instapot and I just bought a huge canner pot. I did not know that you could can in an instapot so I may need to get a bigger one but thanks for the info and the idea

Are you sure it's safe to can in the instant pot? I was told it's not safe to can this way....that the canner doesn't hold a constant pressure!?
The manufacturer says it is safe to use the instant pot. So far my results are great with pint jars..

The IP specificity says it is not for safe canning. Improperly canned onions causes botulism.
