    We finally got a good sale on onions and I'm about to can up 18 lbs. as per the recipe. I've canned onions before and the instructions I followed were yours to a tee. Your video was great! I have subscribed and can't wait to watch more videos. The last batch of onions I caught on sale I canned with sweet peppers we grow... so I have jars of celery, peppers, onions, peppers/onions. So I'm not a newcomer to canning but the video showed just how easy this is when your cook.

    Couple of questions: Can you put a chicken bouillon cube in to each jar? What would be the time for quarts? Is it ok to can onions and pressure can using the half pint jelly jars?

    Oh my, they look beautiful Ms. W. I do mine that way and they are lovely. With some I add a beef broth and some I add chicken broth. Of course it affects the processing time, but I end up with plain and flavored. It's a win/win. You did a beautiful job!! Blessings always, g.

    I make a mean gold relish from an old old cookbook. When I'm out of onions, I use the relish that has lots of onions in it.

    Great info! I just did several jars of red onion, but I did them in half pints and canned for 40 minutes, as I think that pints would be too much for my recipes. Anyways, I am impressed as they turned out so nice!

    These look really good Miss Wanda how thick of pieces do you cut those in from the pictures it looks like maybe a quarter inch or something like that maybe a little less and do you have any trouble with them breaking down over time.

    I don't think I've ever heard of canning onions before but why not? Great for gravies and soups and just about everything! Onions are a must in just about everything I cook!

      Agree 100% Almost everything- Not everything but a Good say 70% of what I cook has Onions of some form & Always GARLIC ...YUMMY YUMMY ..especially when We grew our 1st ever Texas Sweet onions - Early Texas White onions & Creole Red onions - Got over 300 from Hoss tools & then just an assortment with the Creole Reds from Dixondalefarms. .
      Keep some on our deck for plain Green onIons in Grow bags or even around 2nd year Green pepper plants . ( like the small ones that came in the bunch we used yummy )
      We know now at age 56 ( me ) an my husband Doug 58 .
      That this winter we will be doubling our onions to 600- as so many people wanted to try them & my husband took alot to work - plus gave to our Oldest Son for their family as he helped alot fertilizing when me an my husband came down with that UGLY BUG ON CHRISTMAS EVE ...
      plus I froze some to use in many dishes etc.....

    Curious when you freeze dry them is it a strong smell like dehydrating them? My freeze dryer should be here in a month.

    Every video I see of someone canning something, I would LOVE to see a "Later addition" when the bottle is opened up, say a month or two later, and actually show it being used in a recipe, and how it comes out, especially with it being "cooked to death" already. I would LOVE to see that. AND if anything leaked out into the canner, like every time I can something, the water smells like what I canned. They seal all right, but...the water in the canner....it's well....disturbing to see it clouded with....whatever

    Could you add bell peppers or banana peppers when doing this. I’ve only been canning meat so far. I’m trying to learn something new anytime I can. Everything I learn is share. With the people that will listen. Thank you for sharing I have never thought about canning onions.

    Would it be 40 minutes for 2500’ in elevation also? I am new to pressure canning (done carrots and venison). Learned how to water bath can in my teens. Mom never let us learn how to pressure can, she scared the bajeezus out of us so I never bothered to learn how to use the pressure canner. Well she passed 11 years ago and I got her PC and have had it for a few years and this year I decided to learn via UA-cam and do some test runs. So learning what HAS to be pressure canned at my elevation. Thank you for any help you can provide. God bless.

      I often add onions to my jar of green beans when canning. I don't know about canning frozen onions.

    Where did you get the recipe? I've looked in most of my canning books and the only one I have found requires wine and I believe vinegar. I haven't used them yet but I would love to know that this is a safe recipe. Anna In Ohio

      According to your canner instructions. My canner says 3 quarts. But check with your instructions

      Sometimes I keep them in a warm oven, but if it is warm in my kitchen, I don't heat them.

    What is your success rate with the ForJars lids? I bought the Pur brand and they were terrible. About 60/40 rate

      I only had 1 fail. I have canned meat, sweet potatoes, veggies and fruits. Pressure canned for 90 minutes, and water bathed and vacuum sealed. And only 1 fail. I would say they work better than most any I have tried.

    Can you do garlic the same way?

      I found a blog that says you can but try it at your own risk. Heating garlic in a pressure canner will lessen the taste. I would think drying or freeze drying or freezing is a better solution. But garlic will last for many months just as it is, once it has cured.

    Is the texture of the onions like sautéed, or cooked onions? Would you’d already treat them as cooked onions in any dish? Thank you for all of your videos and information.

      These onions are not like saute. I have done several recipes with caramelized onions. I made a French onion mushroom soup. I use thus instead of Campbell's cream if mushroom soup. This is much better as well as much more expensive. If you know how to forage wild mushrooms it would cut the cost tremendously. I don't know how and have no desire to kill my family so I purchase the wild mushrooms. The other recipe is onion jam. This is good for a meat glaze or savory sandwiches. Both recipes came from Linda's Pantry utube channel. Oh, I forgot. I really disliked the onion jam when 1st made. I opened up a jar a year or so later and it tasted wonderfully. I would suggest you let the flavors mix for at least a year. Ms. Wanda stated in this video if you would like to do caramelized onions to go to Ms Livy's(? Sp) utube page

      They are soft and easy to blend and hide in any recipe. And it makes good soup or gravy. Add to any recipe

      Replying to Mary Jane: I also made the balsamic onion jam and was disappointed that I added some thyme. When I tried the little leftover right away, I thought the thyme gave it an almost astringent taste. So I never opened up a jar....til well over a year later. Then OMG!!!! It definitely needs time (not thyme) for the balsamic vinegar to mellow the caramelized onions. It is now theeeee most delicious condiment ever!

    how long does it take for the onions to drop to the bottom of the jar, I followed your plan but it's been 2 days, and they haven't dropped yet.

      Sometimes they don't drop. Some foods, like onions are very light.

      Follow your canner's directions. Mine has a line marked inside, I think it's a quart.

    QUESTION
    What weight do you use being so close to sea level?
    It is my understanding that 10lbs is for 1k feet and above but I am not familiar with anything along the shore.

      Recipe says to. Lol but it sets them and causes them to be limp. Easier to put in jars.

    got my onions on stove now, my onions where frozen,i buy on sale and chop and freeze them later i pressure can them ,hope to try bell peppers next need them out of freezer too

      The price of onions has doubled here in Canada. Plus they turn bad if I try to store too many fresh ones. Not many things that I don't add onion to. I have done half carrot, half onion in a jar before and will try sweet peppers and onion for our beef, peppers, onion and mozzarella on a bun.

      I’ve pressure canned venison and many other things for approximately 25 years; haven’t cashed in my life insurance yet by not removing rings.

      I don't weigh so I have no idea. I just cut up until I get tired, then can.

    I use mine in anything I want onions but don’t want my kids to “feel” the onions. Chicken and dressing, soups, meatloaf, spaghetti, etc.

      Yellow Cucumber Pickles
      (For baked beans, hot dogs, pot roast, etc...)
      12 lg ripe cucumbers
      12 lg white onions
      12 lg stalks celery
      1 red bell pepper (for color)
      1/2 c. Salt
      3 c. Sugar
      1 qt vinegar
      2 T mustard seed
      3 bay leaves (remove B4 canning)
      1/8 t. Ginger
      ... Old recipe used 1 c. Prepared mustard. This may not be safe. Add mustard powder to taste
      Prep and cube veg.
      Sprinkle w/ salt and let stand 2 hrs. Rinse well and drain.
      Add sugar, vinegar, spices to pot. Add drained veg. Bring to a boil, stirring to avoid scorching. (I forget if I added time here to update recipe).
      Process 15 minutes in water bath canner. Makes 12 to 15 pints.
      Use at your own risk, as recipe is very old. Since you're a seasoned canner, I believe you have sufficient knowledge to decide yourself whether if it's a safe recipe for your home.

      I, Wanda King, approve my video! But is the recipe approved? I didn't get FDA approval. I followed several tried and true people that use this all the time.

      I have no clue how many pounds. I have a bowl that holds 7 quarts of cut up veggies. I cut until I fill that bowl. I don't weigh veggies. Sorry.
