I used to do so much canning years ago. We always had big gardens, and what we didn't raise some friends did. One friend used to put out 2 to 3 acres of sweet corn, and we could pick all we wanted. A other friend planted several long rows of beets, and always let us have at least one row. We gardened with my parents and had potatoes, tomatoes, pumpkins, cucumbers. Zucchini and yellow squash, butternut squash, and gobs of onions, radishes and bell peppers. My dad always helped with the canning, his favorite was the tomatoes. The last year we canned, we put up over 300 quarts of vegetables, and I don't know how many pints. Mom and I did so many pickles we couldn't face them for a while. I have canned deer, beef, pork, and chicken, never did fish though. My late husband was a hunter and loved to fish, so my kids had more wild game than tame. I played with recipes and came up with so many ways to fix things. When I made vegetable soup my girls called it "quart jar stew" because I just started opening jars. I baked most of our bread, all desserts and cookies. We didn't have a milk cow but a friend did and we could buy it any time. I live in a small apartment now, and really miss being able to raise stuff and can it. I had a canner like yours, and used it for over 20 years. You , my dear Kym are so blessed to have had such a rich and fulfilling upbringing and life. I would love to have someone to learn alongside. I don't know where you're located but there are many good people that would love to learn your skills to share with others. If you're interested and able, I would check with senior centers, a good director could pair you up with an interested physically able-bodied "youngster" and you could have them do "the heavy work" especially if they have a desire and understand the reason why raising your own food, preservation and storage is so important. I hope you find an outlet to share your skills and talent with those wanting to learn, it will be much appreciated.
Coming from a farm family and then marrying into one, I sure enjoyed your sharing your memories. I’ve canned a fairly good bit, and cooked, too - but not anything near as much as you! I bet you’ve got some more good stories!
I watched this video and canned my own bell peppers and caramelized sweet onions for the first time. I am 79 now and you inspired me to start canning. I’ve also canned chicken n stew meat n butter n beans etc. Thanks for inspiring me. I love listening to your voice as it is relaxing and reminds me of my Grandma who raised eight amazing kids-many daddy was blessed to be one of them.

I'm so glad your showing how to do this. Miss Lori you make everything so easy. You are so easy going and your voice is so calming. For 7 yrs. I worked long hours and never got to have a garden. I lost a brother and both my sisters last year. Then my lung collapsed 2 times and now I'm not able to do much anymore but I think I might can do this. Or I'm sure gonna try. Miss Lori, can I use the Instant Pot to do this It's a pressure cooker, but not like the one you have. I love y'all and thank you.
Starr-sorry to hear about your Mothers condition. My Mother is bed bound, pretty much blind and deaf. I learned how to cook from my grandmother. I started pressure canning in 2020-with help from UA-cam and a couple of FB canning groups! You can do this! I’m 62-so if this ole lady can learn new things I have faith you can as well! I am the poster child for an intimidated pressure canner. I would’t buy one until I was brave enough to try canning with a borrowed one. I borrowed it, let it sit, almost took it back, let it sit and finally, a month later, I said to myself that I was being a big baby and I took that thing and started canning. Now I can’t wait to get one of my own!

We got the cost estimate for getting our irrigation water to become “deliverable” and it will pretty much wipe out what we have saved for fencing. So I’ve been trying to “hold it together.” But now through your teaching video of simply canning peppers and onions, but also your sweet, calm, gentle teaching has given me the release to Jesus of my anxiety, and tears. I have always had some good luck with the seeds out of bought bell peppers. I have seeds that were my mom's. She passed 17 years ago. I don't have a tiller anymore. So I have a bucket garden. Going to garage sales to find plastic chairs to put totes on an plant more stuff.
What I did last year was buy mop buckets from Dollar Tree put holes in them and planted peppers. The handle helps move things around. Also used Target's cheap metal mesh office trash cans instead of plant stands. Good luck on your chair quest.
I bought my first canner when we locked down. It sat on my counter for 2 weeks because I was scared of it. Once I got going that was it, I've canned everything. Meat is my favorite to can. Good video. I've got to try to can the onions.
Meat is my fav to PC also! Especially boneless skinless chicken breasts! I cube them up, add about a half tsp of dry onion soup mix and 1/8 tsp garlic powder boom! Love it!

This was a wonderful video. I canned 18 jars. I used one yesterday on quiche. I made a simple onion and swiss cheese quiche. It was a snap. I used the onions and saved juice. Made rice with the juice. Oh yummmmmmmm. Your amazing. Thank you

Thank you for the amounts of pickle crisp on this and how big to make these peppers. I like to have them Frozen but I don't have enough freezer space and I've never really been happy with just the dehydrated ones and some of my favorite recipes. I had heard over a period of time that the onions seem to kind of disintegrate and just cutting them larger and using the pickle crisp really makes sense to me. Thanks for all your help with this

I will definetly can both of those and have you ever thought of getting a weighted jiggler so you dont have to watch the gauge and you can just listen? Its a game changer and wish someone would of told me sooner. It makes canning so much easier and more fun. Have a blessed day.
My favorite method of maintaining a sustainable pantry is what I consider to be the most practical, utilizing every type of food storage methods and technology available, both old and new. . Except for the fruits and vegetables that get canned, I keep perishable items like meat, poultry, fish, fruit, vegetables and dairy products in the refrigerator on a short term basis until I'm ready to use them for a big family meal - and for even longer term sustainable storage, a large separate freezer, which can store a half side of beef with plenty of room left over for homemade ice cream etc. . I'm considering upgrading to a walk-in freezer at some point.in the near future, if my plans to open a bed and breakfast come to fruition. Sometimes, however a nice round of cheese can do well for quite awhile on a pantry shelf at room temperature - and doesn't mind even if it has to stand there alone.😁 Store bought canned goods get shelves.in the large pantry closet - several for canned meat like corned beef hash, spam and sandwich spread and another for canned vegetables Bread, rolls, grains, homemade pasta, cereals and the like are stored in special humidity controlled bins I buy from Amazon Prime - which usually get delivered to my doorstep about an hour after I order them on my Galaxy Smartphone. . Stuff from the family garden and orchard, like onions, bell peppers, tomatoes, cauliflower, cucumber, pumpkins, carrots, corn celery,, potatoes and yams, cherries, blueberries and strawberries get canned in Mason Jars and stored in the cool, root cellar of this wonderful vintage farmhouse I share with my extended blended family and several rambunctious dogs raised on table scraps from the some of the finest food from a plethora of sources both commercial and home based. . There's even a special separate "summer kitchen" which I use exclusively to store butter and ice cream churns, pots, pans, utensils, extra storage containers, foil, bags, cutlery, and other meal related accoutrement. Out back in the woods, there's even an old rusting vintage still where my great grandfather made some of the finest corn whiskey for miles. Next to it is the rusting hulk of the Ford Model A he used to transport that powerful hootch by the light of the moon on soft summer nights to his eager customers in a tri-county area. Further into this verdant forest of mostly sycamore, oak, pine and scrub, runs a cool stream into which I occasionally cast a rod or net to catch some Brook Trout, Bluntnose Shiners, or whatever takes the bait (just earthworms for the most part). And yes, hunting season means wild turkey, deer, and even an occasional wild boar. Thank you for allowing me to share.
Don't forget the generator and lots of gas to keep the fridge, freezer and possible walk in freezer going if the power goes out for a while you'll be canning provided you have gas for cooking and water ~ Just say'in.

With all the commercials these days showing people inhaling their laundry like the smell of fresh fabric is some kind of intoxicant, causing them to dance around their washing machines, it seems as if we've lost our appreciation for soil. Ask any farmer - you can't grow a decent potato, onion, cucumber, carrot, or tomato in a pile of Tide detergent. 😊

You can also steep the onion skins and make onion tea. It doesn’t tastes like onions like you would think. Purple onions are even better because of the polyphenols in the skin.

I am enjoying your videos. I plan on making your school rolls as I haven’t had those in a many years. I had two aunts that worked in school cafeterias and made those rolls. My mom did it and i would stand back in the corner of the kitchen. Never have lost that fear. I am Wimpy no doubt.
I. Love. This!! I cook for just one. And if I put things like frozen peppers in the freezer, I end up letting them get freezer burnt. Or, because my freezer is full (I only have the one with the fridge) I end up not having things when I want them. I love this! I will try this this year. Thank you.
My mom saved her onion peels all year and boiled eggs for Easter for colored eggs. They were brown onions. The eggs were a rich mahogany color. Blessings!

With the bigger chunks and pickle crisp I am hoping for something better than celery that I canned. It wasn't that great and I will never can it again. But, this sounds doable. I have canned peppers before, but never onions. Going to have to try this. When I find mushroom on sale I can them too. I do cook them a little bit, so to fit more in the jar. God bless.

I was running into the problem of having too much produce to use up fresh, but not enough to fill my small canner. I decided to try freezing some things like chopped onions, peppers, tomatoes, green beans and such in zippy bags until I had enough to fool with. I canned a couple jars of each in one big canner load as a test. They turned out great, though the peppers were a little mushy. I also figured out I need smaller jars of the peppers than the onions or tomatoes, since we don’t typically use such big amounts of peppers in any dish. The pickle crisp idea is sheer brilliance! Game changer! Can’t wait to try it this year. I think I’d be inclined to save the drained water from those jars. Seems like they’d make a good addition to a soup or stew, adding in some flavor and nutrients like a vegetable broth. Yes, I’m so thrifty I can squeeze a nickel till it yells “Uncle!” I’m like you about hunting for that arrow without my glasses on. 😂🤓 I put a little dot of red nail polish 💅 on them and rubbed it into the engravings. Makes it stand out enough for me to see even without my “peepers” on. Thank you for sharing all your tips and experience. 💕
I do not have a dishwasher and have been wondering how to sterilize my jars and lids. I bought my water bath pot and plan to get a pressure cooker as I am growing a garden to help supplement my food. I love watching your videos! May God Bless y’all!
K Boyd was just wondering if you ever figured out how to sterilite your jars. I just use a granite roaster pan, bring some water to boil and emerge jars in there. Or in a clean sink or any type vessel place jars and cover with boiling water. It doesn't have to be in a dishwasher. They didn't exist 100 years ago! Hope you got to do some canning during the last harvest. I can't wait until garden time. God Bless!

I have always had some good luck with the seeds out of bought bell peppers. I have seeds that were my mom's. She passed 17 years ago. I don't have a tiller anymore. So I have a bucket garden. Going to garage sales to find plastic chairs to put totes on an plant more stuff.
What I did last year was buy mop buckets from Dollar Tree put holes in them and planted peppers. The handle helps move things around. Also used Target's cheap metal mesh office trash cans instead of plant stands. Good luck on your chair quest.
I’ve seen thrift shops or such sell multiple old elementary school chairs for really cheap.

I bought my first canner when we locked down. It sat on my counter for 2 weeks because I was scared of it. Once I got going that was it, I've canned everything. Meat is my favorite to can. Good video. I've got to try to can the onions.
Meat is my fav to PC also! Especially boneless skinless chicken breasts! I cube them up, add about a half tsp of dry onion soup mix and 1/8 tsp garlic powder boom! Love it!

This was a wonderful video. I canned 18 jars. I used one yesterday on quiche. I made a simple onion and swiss cheese quiche. It was a snap. I used the onions and saved juice. Made rice with the juice. Oh yummmmmmmm. Your amazing. Thank you

Thank you for the amounts of pickle crisp on this and how big to make these peppers. I like to have them Frozen but I don't have enough freezer space and I've never really been happy with just the dehydrated ones and some of my favorite recipes. I had heard over a period of time that the onions seem to kind of disintegrate and just cutting them larger and using the pickle crisp really makes sense to me. Thanks for all your help with this

I will definetly can both of those and have you ever thought of getting a weighted jiggler so you dont have to watch the gauge and you can just listen? Its a game changer and wish someone would of told me sooner. It makes canning so much easier and more fun. Have a blessed day.
My favorite method of maintaining a sustainable pantry is what I consider to be the most practical, utilizing every type of food storage methods and technology available, both old and new. . Except for the fruits and vegetables that get canned, I keep perishable items like meat, poultry, fish, fruit, vegetables and dairy products in the refrigerator on a short term basis until I'm ready to use them for a big family meal - and for even longer term sustainable storage, a large separate freezer, which can store a half side of beef with plenty of room left over for homemade ice cream etc. . I'm considering upgrading to a walk-in freezer at some point.in the near future, if my plans to open a bed and breakfast come to fruition. Sometimes, however a nice round of cheese can do well for quite awhile on a pantry shelf at room temperature - and doesn't mind even if it has to stand there alone.😁
Store bought canned goods get shelves.in the large pantry closet - several for canned meat like corned beef hash, spam and sandwich spread and another for canned vegetables Bread, rolls, grains, homemade pasta, cereals and the like are stored in special humidity controlled bins I buy from Amazon Prime - which usually get delivered to my doorstep about an hour after I order them on my Galaxy Smartphone. . Stuff from the family garden and orchard, like onions, bell peppers, tomatoes, cauliflower, cucumber, pumpkins, carrots, corn celery,, potatoes and yams, cherries, blueberries and strawberries get canned in Mason Jars and stored in the cool, root cellar of this wonderful vintage farmhouse I share with my extended blended family and several rambunctious dogs raised on table scraps from the some of the finest food from a plethora of sources both commercial and home based. .
There's even a special separate "summer kitchen" which I use exclusively to store butter and ice cream churns, pots, pans, utensils, extra storage containers, foil, bags, cutlery, and other meal related accoutrement. Out back in the woods, there's even an old rusting vintage still where my great grandfather made some of the finest corn whiskey for miles. Next to it is the rusting hulk of the Ford Model A he used to transport that powerful hootch by the light of the moon on soft summer nights to his eager customers in a tri-county area. Further into this verdant forest of mostly sycamore, oak, pine and scrub, runs a cool stream into which I occasionally cast a rod or net to catch some Brook Trout, Bluntnose Shiners, or whatever takes the bait (just earthworms for the most part). And yes, hunting season means wild turkey, deer, and even an occasional wild boar. Thank you for allowing me to share.

Don't forget the generator and lots of gas to keep the fridge, freezer and possible walk in freezer going if the power goes out for a while you'll be canning provided you have gas for cooking and water ~ Just say'in.

With all the commercials these days showing people inhaling their laundry like the smell of fresh fabric is some kind of intoxicant, causing them to dance around their washing machines, it seems as if we've lost our appreciation for soil. Ask any farmer - you can't grow a decent potato, onion, cucumber, carrot, or tomato in a pile of Tide detergent. 😊

You can also steep the onion skins and make onion tea.
It doesn’t tastes like onions like you would think. Purple onions are even better because of the polyphenols in the skin.

I am enjoying your videos. I plan on making your school rolls as I haven’t had those in a many years. I had two aunts that worked in school cafeterias and made those rolls. My mom did it and i would stand back in the corner of the kitchen. Never have lost that fear. I am Wimpy no doubt.

My mom saved her onion peels all year and boiled eggs for Easter for colored eggs. They were brown onions. The eggs were a rich mahogany color. Blessings!

With the bigger chunks and pickle crisp I am hoping for something better than celery that I canned. It wasn't that great and I will never can it again. But, this sounds doable. I saw this today 4-28-22. I got a lot of onions yesterday at the food bank. So I canned them per your instructions just now. Thanks so much.
I was running into the problem of having too much produce to use up fresh, but not enough to fill my small canner. I decided to try freezing some things like chopped onions, peppers, tomatoes, green beans and such in zippy bags until I had enough to fool with. I canned a couple jars of each in one big canner load as a test. They turned out great, though the peppers were a little mushy. I also figured out I need smaller jars of the peppers than the onions or tomatoes, since we don’t typically use such big amounts of peppers in any dish.
The pickle crisp idea is sheer brilliance! Game changer! Can’t wait to try it this year.
I think I’d be inclined to save the drained water from those jars. Seems like they’d make a good addition to a soup or stew, adding in some flavor and nutrients like a vegetable broth. Yes, I’m so thrifty I can squeeze a nickel till it yells “Uncle!”
I’m like you about hunting for that arrow without my glasses on. 😂🤓 I put a little dot of red nail polish 💅 on them and rubbed it into the engravings. Makes it stand out enough for me to see even without my “peepers” on.

K Boyd was just wondering if you ever figured out how to sterilite your jars. I just use a granite roaster pan, bring some water to boil and emerge jars in there. Or in a clean sink or any type vessel place jars and cover with boiling water. It doesn't have to be in a dishwasher. They didn't exist 100 years ago! Hope you got to do some canning during the last harvest. I can't wait until garden time. God Bless!

Ms. Lori. I made your breakfast potatoes a while back, with onions and red peppers. Well, I’ve made at least three more batches since then. My son loves them! He doesn’t like “store” food and he can pop open a jar and fry them up whenever (teenager with a hollow leg) he wants.
