    Great video, my only critique for editing is having that cutaway music not so loud, it's quite jarring. I've noticed it on the videos :)

    as Indonesian, shin ramyun is not really spicy, so I always add more chili powder garlic powder and mushroom powder. I cooked with beef and chinese cabbage and lime juice, delicious spicy sour, but original shin ramyun is already the best instant noddle for me, second is indomie goreng.

      Do you like the Indo Mi Goreng too? I've made so many dishes with that red and white packet, but the rendang and the extra spicy are really good as well

      @@alixgiggles5329 red, and unfortunately I don't have the ingredients on hand, and I'm very much broke and almost out of groceries 😞
      However, I did add somd garlic powder and a little bit of soy sauce to the broth before adding the noodles. Also, instead of using 550mL of water like the package says, I used 400mL of water, and at the end of cooking I added 100mL of milk. It makes the broth thicker/creamier so it sticks to the noodles a lot better, and by using less liquid overall the broth is still spicy and very flavorful

      I think it's because we always want what we can't have or what isn't good for us. And eating late at night isn't good for us so it taste even better! 😅 That's my take on it. What do you think?

    God I love this chef.
    Late nite ramen is better, 11pm is not too late, and ramen isn't meant to be healthy -- add more MSG!!!
    Nothing incredibly novel about this recipe but it's simple to make and delicious! This channel is super underrated.

    The best technique I always do is I put the season packets in first before water then kinda fry it a bit to get that smoky burnt smell and added water. It gives the soup taste sharp.

    It's the best Ramyun (I suggest Shin Black for those who prefer less spice). That or use 1/4 to 1/2 of the seasoning packet. The 2 kings are Indomie Mi Goreng & Shin Ramyun. Hard to beat those 2 & there are countless ways to add and improve them. I look at them as a foundation in which to build upon.

    What I like to do is add Kimchi in the process PLUS drizzle sesame oil right at the end. The sesame oil makes a beautiful difference. No need for extra msg.

    I totally agree that late night is the best time for a bowl of ramen. Most nights I get home at 11 pm after work and I would make myself a hot and spicy bowl of ramen. I make homemade ramen seasoning so I don't use the seasoning packets that come with it. I also add other ingredients like spinach, bok choy, napa cabbage and fresh mushrooms. I make even the cheapest instant ramen ,( Maruchan ) look and taste ⭐⭐⭐⭐⭐

    Better with butter and garlic instead of msg. + Whatever veggie and meat you want. Keep the stock, extra chilli powder and egg. PS those dehydrated vegetables packets will shorten your life span.

    I tend to go even simpler with my ramen. I eat the nongshim beef ramen bowls that go in the microwave, and after the noodles are cooked I put in some cojack cheese and melt it a bit, then I fry an egg in some butter and then place it right on top.

    I love Shin Ramen, it's great with Hotdogs, Sausages, Bacon, Spam, Ham, egg, Prawns, Burgers, Chicken, Fish and Chips! I think it's great later because you've been waiting a while for it.

    two key takeaways for those who don't know how to cook......you add the dry noodles AFTER the water is boiled and you stay with the cooking process throughout and don't go wandering off for 5 mins to watch an ep of friends.

    Instead of chili powder I use cayenne pepper powder because chili powder isn't hot enough for me. It works so much better

    I normally do half the pack of soup base sometimes here atleast in the UK the soup base can either be normal, or make it feel like you're eating lava

    i like mine with half the soup base and the egg, but i top it with fried onion (white, shallot, and white part of green onion)/garlic and fresh green onion. I eat it with soju, i find that helps with the spice. next time i'll make it with beef stock and msg
    also you're right, the best ramen is the latenight bite stolen from someone else

    Erm... Campbell's beef stock is brown and msg is white.
    Does it make a difference?

    If I have spring onion and left over spam/ sausage when should I add it? Straight away with the stock? Also what’s the time frame for the noodles? I hate when instant noodles are soggy

      Spam should be at the beginning, spring onion - whites should take 2 minutes to cook whilst greens should be added right at the end.
      Noodles - go with 75% of the cooking time to get it just soft enough to be firm to the bite

    holy crap that's a lot of msg. my grandma used this stuff and she puts only a dash for an entire dish. that's like a few tablesspoons for one bowl of ramen!

      In reflection, I think it’d anchovy stock. But yes haha it’s a heavy teaspoon of it.

      @@StoryBites. Ok that makes more sense since msg is white. Powdered stock is more likely since it's brownish. It seems common in Asian cooking to do liquid stock then add powdered or stock on top of it. Like I've seen plenty of recipes that call for chicken broth and chicken bullion cubes as well
