    The restaurant you ate in have interesting story,first ,the name (manastirska magernica)means the place where the monks gather to eat and second the recipies are collected by monks arround Bulgaria for more than thousand years,first monasteries in Bulgaria date from arround late 800s a.d since when we addopted the christianity,at that time there was the so called three language dogma wich say you can preach the gospel only in Greek,Latin and Hebrew,but because Bulgaria was one of three most powerful states in all of Europe along with the byzantene empire and the frankish empire,this are the ancient super powers of europe😃 also at the same time we created the cirilic alphabeth and the title tzar wich is equal to emperor ,our rulers recognise the danger of preaching in foreign language(not to be assimilated by foreign power) and that's why we were privileged to listen the service in Bulgarian,just for comparison,all of western Europe start the services in their native languages 600 years later than us,before all was in Latin,in short we destroyed the three language dogma and the Bulgarian language became the fourth official language and one who was blessed for service and preaching like the other three were...God bless and godspeed my friend.

    Any country known for a variety of roses, wine, and cheese, they obviously have the agriculture to have great food! I heard the tomatoes and pepper salads were amazing. I think they would start a meal with fresh vegetables with olive oil. I haven’t been there yet, but it’s been on my list for a while.

      Unfortunately olive oil is not part of the Bulgarian production and most of the restaurants do not use it unless specifically mentioned on the menu. Bulgaria is a huge sunflower oil producer 🌻

      @@Nubianette sorry, I thought you were talking about eating outside (at a restaurant). At home Bulgarians use ALL kinds of oils for their salads - the variety is as big as in the US. Just the restaurants are usually stingy and unless eating semi-upscale and upscale you cannot expect olive oil in your salad.

    7:21 this is Vitoshka street. Back in the days it was a normal street, then they turned it into pedestrians + trams street only, and then they ditched the trams, renovated it and made it pedestrians only. Most of the Bulgarian cities have this one main street that is pedestrians only.
    14:18 Yes, he's a Revolutionary, National hero, The Apostle of freedom. And yes, this monument was build at the actual place he was hanged by the Ottomans. It was just outside the city back then.

    I'm not sure where you get your food information from, but Balkan food is great in general. Go anywhere: Greece, Turkey, Serbia, Northern Macedonia and you'll have a great meal.

    I think you have captured very well the ambience of Sofia, although on a hot summer day the streets are normally quite empty. 😅 Also, it’s the holidays season and most of the people are on holidays, or some go out in the evenings. I’m in Sofia now and it’s so hot that, like most of the people, I prefer to stay indoors and go out after sunset 😅😅

    man it really is so quiet nowadays .. many many of the young population bulgarians are leaving to find opportunities in different countries. it's unfortunate but population decline is expected to continue in the future, i read a stat that by 2050 the population will decrease another 20% from what it is now (6.5 million)
    my parents also moved us to america after winning green cards when i was only a year & a half. i'm 25 now .. but like to visit often. currently in bulgaria rn too ! hoping for things to improve more & less bad news down the line🙏🏼

      You’re not visiting often enough. Bulgaria is above the 6.5 million you are talking about. You are also not aware of the many Western Europeans that have moved to Bulgaria the past 10-15 years - the extremely low income tax (including corporate) is attractive to them. In fact, quite some young Bulgarians have moved back to Bulgaria - rents are still cheaper than Western Europe, just the food factor (groceries) is more expensive than Western Europe. It is not all flourishing in Bulgaria, but there are a few attractive factors to both young Bulgarians and the foreigners.

    Bro you thought the roots of all balkan recipes was gonna suck? Then you are in for a treat. You can spend an entier week here and still not be able to taste all the different things that we serve. Not to mention that restaurants dont serve most things we cook at home... You are in for a treat buddy, keep eating, you will never be disappointed.

    Visit a Black Sea coast Nessebar old Town(UNESCO World Heritage Centre) and Sunny Beach , one of the biggest international summer resorts in Europe, it's high season now.

    ... jetzt war ich so mitgerissen von Bukarest und den anderen großen Städten und dachte mir bei dem Vlog, gleich biegt er in eine Prachtstrasse ein (obwohl ich das ja eigentlich hasse) . Aber du hast es nicht getan.
    Der Vlog gab mir trotzdem ein gutes Gefühl über die Stimmung an einen warmen und ganz und gar normalen Sonntag irgenwo in Sofia. Danke.

    so, Sly, that thing that is served with the bread is called chubritsa - we usually eat it with bread only and in small quantities. Dont dip the bread in chubritsa and then into the meal - you ruining the flavor of the dish that way
    We are known for the oil made from roses which are commercially grown like 200 km from Sofia - you will not see a lot of roses grown in the bigger cities.

    Just FYI - you can go anywhere you want man... its really safe in Bulgaria... I grew up in the UK and when I came back I was amazed - its not like anywhere in the west in that regard.
    You can say hello to anyone, you can ask anyone for help, if you lose something alot of the time people will store it for you and give it back when you prove its yours.
    Have a good time and dont worry about those underpasses - graffiti makes it look so much scarier than it is, I would let my children go through them at night without being too worried about it, youll be completely fine.
    Only thing I would recommend is to stay away from soccer matches - young men get abit carried away with hooligan culture (its still mostly harmless, nothing like UK or something).

    The Vitosha cenntral street is empty now, in the early 90s there were no malls so we were shopping on this street ande the others around from the previous video. The main street is booming at NIGHT after 20th of September, when it is still warm, but hundred thoudsands of people are back from summer holiday. It's the best season for us Sofians, because I can drive the car even in rush hours and avoid sitting in 1h traffic jam, which does happen in the winter.

    The Soviet army monument was removed by the "democratic" parties in the Parlament after the start of Russia-Ukraine war. Vasil Levski monument is actually on the spot where he was hanged by the ottomans in 1873 after he was betrayed and captured

    I really wish to get to be the local tour guide at some point because I see alot of travelers fall for the tourist traps or just go to the wrong types of places for food when in reality just by their jotel/motel there are atleast 20+ amazing food spots that deserve to be visited.     Russian empire - Tzar Russia and Soviet Union are two different things, like Tzar Bulgaria(3rd Bulgarian Kindom) and Soviet era Bulgaria(People's Republic of Bulgaria), after the collapse of USSR and political tensions start to create division - rusophob and rusophile, but historicly both nations have deep cultural and religious ties, when the cyrillic alphabet was created by Bulgarians(9th century) , everything was translated from Greek including The Old Testament and was pass to at that time Kiev Russia from witch they got their Enlightenment, tha's why when in Russian Ortodox church they have worship service in Old Church Slavonic(old Bulgarian), Bulgaria is one of oldest countries/nation in Europe , established since 681AD, never change the name in our 1300 years of history and yes we have Knan rules befor Tzar(king)

    I came across this video by chance and I was interested in watching it. First of all, I wanted to find out what a person who knows nothing about our history would say about us Bulgarians.
    Boy, I have a house that was built before Columbus discovered America!!! And one more thing - the founder of the Bulgarian state was Khan Asparih in 681, and otherwise we really love Vasil Levski, because he is a revolutionary and a wake-up call for the Bulgarians, organizing them to fight against 500 years of Turkish rule. Sofia is the capital of our country and is above all our administrative center. Actually, you saw the monument, but you did not see the Bulgarian National Assembly on the other side of it. If you want to see where the valley of roses is - take a bus and go to Kazanlak, and if you want to know more about our history, come to Plovdiv - exactly one hour away by car or by bus (there are buses every hour on the route Sofia- Plovdiv )

    Vasil levski means basil the lion,also the name basil means emperor in Greek,or basileus,...he was so good that the CIA was exploring his work and his tactics of disguise,even in the CIA headquarters there is a phrase of levski ,he created the biggest revolutionary network in all of Europe for the time and all in deep secrecy ,the Turks found out for his activities years later😂,they called levski gyngibi or the ghost,the spirit(gin means spirit,or ghost)cause every time they got in his tracks he just dissapear somewhere ,he was jumping over fences and was a great athlete,his nickname pop up after he jump over a huge trap no body was able to jump during drills for war against the Turks,because the Turks could not catch him they ask for help the British and German inteligence services and they got him.....his ideas were ahead of it's time for" democracy,pure and holly republic"as he said........Bulgarian constitution,or the so called tarnovo constitution is one of the most liberal and democratic,it was created in tarnovo(that's why is called tarnovo const.)arround 1879-1880 and in it it's written that if you are a slave you become free man in the moment you step on our soil😃😃😃this is because we were brutally oppressed by the ottomans for 5 centuries and we dont want anybody to be like we were,the Balkans were much more developed from the west and when the Turks conquered constantinopol and the Balkan states arround early 15th century all the scholars architects ,artists etc migrate to the west and boosted the renesance ,but it actually started here in the east half a century before it happened in Italy and the west,the proofs for that are in boyana church in Sofia where the ruler that donate money for the church is painted as he was in reality and this is called realism and the renesance is explained often with this (the realism)before people were painted just randomly,the beard the crown etc

      так у нас в России то же самое, просто потом коммунальщики это закрашивают. если бы не закрасили, было бы также измазано все. в детстве помню гораздо больше было повсюду граффити в СПб, сейчас оперативно с этим борются.

    Bulgarian food is low in flavor. Very basic but kinda healthy with all the veggie dishes. So it's okay. Romanian food however is so good though, I was shocked. Smoky flavors like bbq, lots of garlic, lots of meat, lots variety from French to German to Turkish to Greek influence in it. I'd say the best food in Europe is in Italy, France, Spain/Portugal, and Romania, yeah I said it, Romania. When you tried that eggplant dip and said it had no flavor I knew you must have gone to a wack place. Romanian eggplant dip is made with smoky roasted eggplants on a grill, lots of red onion a little garlic and you can make it red mixed with roasted peppers or white with a bit of mayonnaise. And it also has olive oil or sunflower oil and other seasonings. Best eggplant dip I ever had, more flavor than the Jewish, Armenian, and Middle Eastern ones.

    "Stotinki" are like cents in the U.S. dollar or pence in the British pound. In Bulgaria, 1 lev is divided into 100 stotinki, just like 1 dollar is divided into 100 cents.

      Stototinka, literally means a cent. 1/100th. Tye new Bulgarian euro coins are still going to be called stotinki when we start using the euro eventually.

    No offense, but judging by your english dialect, I presume you're from the US. I don't know how you can judge another countries food, given that the US has one of the worst food cultures out there :D Plus Bulgaria is held highly when it comes to yogurt and salads. Also a big part of our cuisine is Turkish and Greek or has been infuenced by them. We really have a lot of incredibly tasty dishes and it is a shame that some people are prejudiced like this, without ever even trying our food x)

    It's so quite in the second half of July and the first half of August just because most of us (thе Sofia villagers :) - софиянци) have been dislocated on the sea side - in Northern Greece or on our Chernomorie (Черноморие). The most pleasant time in Sofia, although the heat and the smell from the rotting trash in the containers is so focken disgusting... It's typical for everywhere else in southern Europe, but nevertheless, it's hard to get accustomed to it. And yes, our traditional meals are good enough, several times better than any food (meals) in western Europe. But food is pretty expensive nowadays. And the so called "monopoly or oligopoly" of Kaufland, Billa, Lidl, Fantastico and CBA is not easing it.
