As an Italian I don't think it's a big deal cooking pasta differently from how we do it. To me, cook whatever you want, how you want. It's all good. Important thing is to actually have the the food to cook. Greetings from Italy.

I get Italians having problems, at least to an extent, when people say they're creating an Italian classic meal and they don't actually make the meal using the authentic ingredients.
However when it simply comes to people making a meal with pasta as an ingredient and don't at all claim it's Italian dish. They may say it has Italian flavours as it uses many ingredients used in Italian dishes. But it's simply a recipe they've come up with that may use some Italian ingredients, I don't quite get the issue.
People use different types of bread in all sorts of different ways in many different recipes, why is pasta different?
And I'm someone who wants to make and try the true Italian recipes for Italian classic foods as they are authentically made. Like a true Carbonara without cream or bacon, but with guanciala, egg and pecorino and some black pepper and pasta water to make the sauce. Have watched so many Italians make true Carbonara and it looks amazing.

This is a brilliant recipe! Very Italian! I made it today too, however I added a real cappuccino and Sicilian cannoli to it. So there was already coffee and dessert! So yummy-yum.

Ok I'm Italian. After watching the video and reading a good number of hateful comments from Italians (some absolutely hilarious, to be honest) I can say the idea behind this is NOT BAD AT ALL. It's kind of the same principle of cooking risotto. In fact I'd call it a "pasta risottata" (risotto style pasta). The starches come out and form the creamy texture. BUT. For whoever is going to try this at home you may want to follow this advice, as it will make it MUCH BETTER TASTING (believe me. I'm Italian.) Make it REALLY risotto-style by sautéeing the chopped onion OR garlic (please, do not use both at the same time) in the extra virgin olive oil first, on a low heat, until golden. Then add the cherry tomatoes and stir for a while, until they soften and let out some of their juice. Mash them up a little bit with the wooden spoon too. NOW you can add the pasta, sautee it for a minute until it gets lightly toasted and well coated in the sauce, then add BOILING WATER (which you will have previously heated!!! Please do not add COLD WATER) + the rest of the ingredients, salt, pepper and what not, and wait for it to cook and absorb the water like in the video. Take care not to add too much water, or you'll have to wait too long until it evaporates when the pasta could be already cooked, and as a result overcook the pasta, which sucks. Pour in just enough water to cover the pasta, then add more LITTLE BY LITTLE while it gets absorbed. This is the risotto technique. Enjoy!!

superaletta what u say is what common sense(s) should dictate, whereas this recipe sacrifices a lot of flavour for the sake of convenience. I was appaled by this way of cooking, although the result is certainly edible. You can still do much better with just one pan, though

Hilarious!! I just made this and it’s awesome!! Takes a little more time than he says about 18 minutes because the water has to hear up. But it turns out delicious!! Oh and I grated the garlic for extra flavor!

-boil the water with salt in it (only salt)
-then put the pasta and let it cook for 10 minutes (it depends on the type of pasta you use but it is always around 10 minutes) then throw away water
-then you put the sauce you made elsewhere in your pasta and eat it

I made this dish and it is my absolute favorite. I did add mushrooms, Italian sausage and a large can of Rotel. Then once the noodles absorbed the water I added butter and olive oil.

Look, I'm Irish (Italians can chime in if needed per favore please do not kill me) but from what I know, You should keep the pasta away from the other ingredients until the end of the dish. Pasta should be cooked in a high volume of water because the starch released when cooking isn't the best tasting (salt needs to be used to remove starch), and the sauce will thicken up way too much if done in one pot. Also, by only giving the sauce and pasta only 10 minutes, some ingredients won't be ready, the pasta won't be cooked enough, the tomatoes will not have been given the time and space needed to break down, the garlic will not have been heated enough (garlic should be minced), a lot more can be said but to improve the dish, this is what I would do.
- Cook pasta in pot with sufficient water (high amount) with some salt (a generous pinch will do) until fully cooked, should be al dente. Strain pasta. Unsure if correct but rinse pasta to remove excess starch (done in china, unsure in Italy per favore do not kill me) to prevent pasta from sticking.
- Add tomatoes, garlic, onions into pan and cook down continuously breaking down all ingredients. Add water (obviously) to loosen sauce, along with salt. Always taste!
-Plate, add basil, enjoy.
Like I said I am not a pasta expert, but this seems about right to ensure everything would be cooked correctly. Italians scrolling through, very sorry about this Irish chef. Waterford (where I live) definitely has a brilliant food culture and respect for food (many good chefs, especially in Dungarvan) although some people will be different. What would you change?

I modified.
I pre-cooked in oil the onions and garlic and tomatoes and added mushrooms and balsamic vinegar and THEN transferred to boiling water with pasta and basil leaves - and cheese at the end! Finger-licking good.

Italians are the toughest food critics. The French will eat anything if it's presented nicely. But even Italian children will eviscerate the chef if it isn't as good quality as nonna's food.
Dude, I'm from Northern Italy, and I can totally agree with you... Those pasta-eaters down there from south are just too fussy about food, lol. Ever heard of KFC or Subway? They don't even have McDonald's lol. They don't know how to speak English correctly. It's a shame to be called Italian when you're from Milan, trust me... :(

You never actually made the dish to know what it tastes like. It doesn’t taste bland AT ALL. It has drag onion and garlic and basil which all have strong flavors even if u never tried it.

@@xbabybriox he boiled garlic, onion and tomatoes..... The flavour went in the water he threw away, and the pasta was overcooked. "creamy" is a strong word when the sauce is made of 4 boiled cherry tomatoes and some cheese...

Italians for sure! Spanish food is actually pretty amazing, they have a right to feel protective over it. But come on italy, you're getting this upset over pasta?? Pasta?! Pasta has to be the most basic food you could have come up with.
I must say on a cooking workshop in Florence, we were given the demonstration of how easy it is to shop at the market on the way home and then to make delicious fresh pasta and the sauce in quick time! I've never forgotten the taste. It was two pots, two separate tasks, meat sauce done first and set to cook, then fresh pasta made & cooked afterwards. We followed with home-made tiramisu we had made first.
Tips:
1- never boil or cook basil
2-spaghetti take 10' to cook from the moment in which water boils...to cook like this they will take the double
3- you'll obtain a soup of noodles with boiled onions and tomatoes
4-all this will taste acid
5- borders are open, we will welcome you in Italy with authentic pasta!
