Such a great episode! Wunch is just a perfect example of the awesomeness of all the side characters in this show! Wunch, Doug Judy, the fireman played by Patton Oswalt, also some you don't even know yet(Adrian!!!), this show is so amazing! To be fair to Sophia, when she says Jake could've handled things differently I think she means how he reacted to her pressing pause on the relationship, i.e. respecting her wishes and not going to the party in the first place.
But even with the arresting thing, he could've taken Hoytsman out a back door or remove him from the party in a subtler way, rather than kind of parade him through the whole room in cuffs.
