Ingredients for Masala Vada (10-11 no.):
Channa Dal (Yellow Split Peas) - ½ cup/ 100 g.
Masala ingredients: ½ tsp cumin seeds (jeera), ¼ tsp fennel seeds (saunf), 2 cloves, ¼ inch cinnamon, 2 cloves of garlic, ½ inch ginger, 10-15 curry leaves, 5-6 mint leaves (pudina), handful coriander leaves, 1-2 green chillies, 1-2 dry red chillies
Onions - finely chopped, ½ cup
Rice Flour - 2 tbsp
Salt to taste
Cook oil for deep frying
Ingredients for coconut chutney: ½ cup grated coconut, 2 tsp roasted Bengal gram or 3-4 cashews, 1 green chilli, ¼ inch ginger, ¼ tsp tamarind pulp/small piece of it, salt to taste, ¼- ½ cup water
For the oil tempering: 1 tbsp cooking oil, ¼ tsp mustard seeds, 1 dry red chilli, 4-5 curry leaves
