She was trying to say that eating a "bad" food like chocolate once in a while won't automatically make you fat or indicate that you're a bad person, just as eating a "good" food like a carrot doesn't immediately make someone thin and a saint. She could have worded it a lot better, but that was the intent of her statement

A little bit of fat is necessary to survive but it’s literally only ever a burden to carry it around because of lack of discipline or lack of healthy food options.
