I like throwing all my "scrap" pieces into a bag, and then when the bag gets full, I glue a load together to have unique pen or bowl blanks.

You can always build the diameter back up with your CA glue if you remove a little too much material. You don't want to be doing that all the time just because it drastically increases your glue costs, but it works when you have a blank you don't want to lose or have your heart set on a specific kit.
