  • Avial is a dish that has a unique place in typical Kerala as well as Tamil cuisine and Udupi cuisine. It is a thick mixture of vegetables, curd and coconut, seasoned with coconut oil and curry leaves. Avial is considered an essential part of the Sadya, the Keralian vegetarian feast.

    Ingredients
    2 tbsp coconut Oil
    1/2 cup curd
    2 springs curry leaves
    1/2 cup fresh coconut grated
    2 piece green chillies
    2 tsp Jeera(cumin seeds)
    2 cup Mixed Vegetables like Eggplant, plantain(green banana), potato, Drumstick, Snow pea, beans, carrot, winter melon etc
    1 tbsp Rice flour( for thickening)
    to taste Salt
    1 tsp turmeric powder
    1/2 cup Water
    Directions:
    In a Vessel cook all the vegetables with little water, salt & turmeic powder till its cooked properly. Grind coconut, green chillies & cumin seeds to a fine paste & add this to the mixed vegetables. Take 1 tbsp of rice flour & mix this with little water & make a fine paste without any lumps & add this to the mixture. This will thicken the gravy. Let this mixture come to a boil. The gravy should be thick in consistency. Now add curry leaves, Coconut oil & thick curd to the mixture & mix well. Avial is ready

    very happy and safe onam to all malayalis...but we nvr use mustard seeds in aviyal... aftr cooking vegetables and mix with gravy, just add coconut oil (without heating) and curry leaves as it is,,, thats it tq

      Yes. When you add seasoning with mustard, it becomes kootu. Not aviyal.

      Exactly we never temper it.. Also while grinding the coarse coconut paste we add few shallots and curry leaves.. But I still like all your videos.. Keep it up sir..

      @@dhanyaambujakshan2867 adding shallot is to be omitted.....to make Sadya satvik onion garlic should be avoided.... Still some communities do add shallot

    Onam ashamshagal sir. Good effort but only 50 % correct. I love your recipes but here it was not done the right way. The most important thing about AVIAL is that the vegetables are cut into thin strips like match sticks and slit green chillies as many as you like. Even the drumsticks are cut thin. And yam and green banana and madras cucumber is a must . Add 1/4 teaspoon turmeric ,salt to taste and few curry leaves BUT NO OIL. Pressure cook with a sprinkle of water and NO WEIGHT OR WHISTLE because the vegetables have to be crunchy.
    Grind fresh coconut with jeera ,few madras sambhar onions to a coarse paste . After the veggies are done and crunchy add the coconut paste and curd and simmer for a few minutes. Switch off the flame. Pour coconut oil in a circle over the cooked avial, place a few sprigs of curry leaves and close the lid. Stir well before serving..
    Try this next time.
    It is a hand me down recipe since generations and we all love it.

    Thank you for taking attempt making avail our one of the super traditional dish.and so happy sir.but want to say one thing.avail is combination of all vegetables.and it's healthy little correction is there sir.after putting the coconut paste boil forwhile.remove from stove and put raw coconut oil and curry leaves . Close it with lid 2mintues.just enjoy the aroma while pouring into serving dish.smell of coconut oil mixing in hot vegetables it's super duper sir.just try once.

    Sir, In kerala we are not using mustard seeds in the last. We will add curry leaves and fresh coconut oil ( not heated) and will close the lid for sometime.This makes aviyal more tasteful.

    Sir this is not authentic kerala avial. Usually mustard seeds are not used in avial and you must add crushed sambar onions (ulli), curry leaves and raw coconut oil in the last.

    Hello I am a follower for nearly 10 years and have learnt a lot from u however sorry to point out that never ever ever mustard seeds😢 are used!actually no tempering is done!thanks for the recipe though.I noticed that during Eid u dedicated a week long recipes and how to forget that wierd Goat head🤭🤭🤭Am sure you have a lot of Malayalis in ur subscriber base who would have liked a few sadya recipes shared here😊
