    The Swabian Alb is a plateau in the south of Germany - it is the highest part of the foothills of the Jura Mountains. Alongside the "Alb-lentil", the area is known for its pastries, “Laugenbrezeln” and "Maultaschen". Spätzle with lentils are the Schwabian national dish. The local Alblentils are cooked with a lot of dishes and can even being eaten in a cake.
    What's cookin' is about traditional culinary recipes from different European regions.

      I did felt sorry for the 16 y.o. when she explained that the job she was doing was fun until her mother criticizes her, than it is no longer a joy to do it. If we parents would only realize what damage we do by criticizing, we would never do it. Criticism is not teaching nor instructing. It is quite the opposite. It takes all joy out of learning.

    What a beautiful family. What a beautiful community. Big is not better. We all should go back to smaller communities who rely and trust on each others word. Where we work together for the common good instead of being crooked and for ourselves. I wish this family would adopt me.

    Kümmel is not cumin in English, it's caraway. Cumin is Kreuzkümmel (completely different plant).

      @@blondecat666 100% True! ;) Both spices belong to the umbellifera family and are botanically closely related. But even if the name suggests, cumin is not a subspecies of the caraway. ... The difference in taste between cumin and caraway is very large

    Its so good to see how you solve the problem of drying with organic grain and lentils. Here in the USA even organic garbanzos and lentils are allowed to be sprayed with round up to dry the husk for harvest. We have found a local co-op that buys from an organic farmer who does not use roundup. Its very rare and hard to find this way in the US and Canada.

    It was especially moving to hear that the traditional lentils that the family grows in this video, almost a lost crop, were recovered in recent years from the Vavilov Institute in Russia. If you don't know the story of Vavilov's collection, look it up. This tremendous seed bank was protected by dedicated staff members during the Siege of Leningrad in WWII, during a time when the people in the city were starving and without fuel, and several of the staff members actually died of starvation while preserving (and never eating) the precious seeds and grains in the collection. Whether or not these particular lentils were among the crops saved in the war, it shows how our seeds are the among the greatest treasures we have.

    I’ve never seen grass brought in for cows to feed on. I usually associate grass-fed with pasture grazing. This is a really amazing vid on organic farming.

      Then you need to watch what farmers in India do, as they too bring fodder for their animals, grind it up and give them to the cows.

    Thank you for making this documentary. I am an Indigenous person in America and told my friend in Germany how we used to grow corn, beans, and squash together (like lentils and spelt) and when eaten together they made a complete protein. He mentioned to me about this traditional food - lentils and spaetzle. When I heard this as well in your documentary it made me think our ancient cultures knew what they were doing. I hope to try this meal one day.

    Swabian here (Unterland). Current inventory of Alb-Leisa: 4 boxes. So glad that a local Rewe store keeps them in stock. Especially in autum and winter times Lentils and Spätzle are served once a week. And a little flatulence once in a while keeps your bowels fit for duty.

      I remember a Sprichwort (adage) said to encapsulate some Schwabish values from when I lived in Baden-Wurttemburg: "Schaffe, schaffe, Haeusle baue!" It means, "Work, work! Build a little house!" Diligence, hard work, and thrift will enable you to be secure in your own home, if I was told correctly. And Haeusle [I don't know how to make an umlaut over the "a", instead of "ae"], the family's name, is pronounced the same!

    Its being rediscovered that cows also benefit from browsing on low growing natural shrubs. Forest browsing cows are actually healthier than purely pastured cows.

      k8eekatt pasteurized cows were meant to eat grass not grains but it's just the demand by the population that makes it impossible. Look at how gorgeous these cows look, the cows here in Washington are very nice compared to Californian cows that I've seen but are not as pretty and shiny or as healthy looking as these beauties.

      At Christmas I was gathering long trailing ivy to decorate my home ( with holly) and found all the ivy I had seen previously growing and hanging from the trees had been stripped completely of leaves, and saw a small herd if cattle brought in to overwinter in this sheltered field munching greedily on the trailing ivy !!!! Cheek !! Eating my ivy !! Lol

    Lentils are the easiest bean to sprout. The sprouted lentils are nuttier in texture and have a different nutritional profile than unsprouted.

    I love lentils. I regularly make a Balkan lentil soup (no-one makes it as well as my mum) and use lentils in salads. They're so nutritious. I only recently discovered that lentils are a common ingredient in many near east, middle eastern and Indian sweets and they taste delicious. I believe Turks also use red lentils for a vegetarian kofte. So many recipes, so little time!

    Ha, I have a spätzlehobel bought in a thrift store.
    I can't say that my kids liked it when I cooked them,
    but they are (not being from that part of Europe) not used to them.

    I've been to Swabia many times as a guest, and they have never offered me anything with lentils. I'm disappointed now. I love lentils.

      A really good (German) lentil soup is the best there is. I already liked it as a child and my girlfriend still makes it for me (I don't get it so good...) so that I can freeze it and eat it whenever I have an appetite for it.

    Actually, it looks as if she is sprinkling the breads with caraway seeds
    (not that the difference is that big visually).
    Caraway is a spice that is commonly found in inland Europe,
    while cumin is found mostly around the Mediterranean and the Middle East.
    This being the Schäbische Alb, it is more likely to be caraway than cumin.

    4:47 Kümmel is not cumin, it's caraway. Kreuzkümmel is cumin. So, that bread is being topped with caraway seeds, not cumin seeds.

    I'd love to try making that warm potato salad at the end, can anyone tell me how they cooked the thinly sliced potatoes? It must be thin sliced when raw right? How do you cook such delicate slices? I also love the idea of the spaetzle with lentils, sounds so good!

      Use a slicer, and gently lower them into boiling water with a flat mesh spoon. Only leave them in the boiling water for a few minutes, then drain them - basically like you would cook pasta.

      No, you can boil the potatoes first, then remove skins and slice or cut thinly with a knife.

    wocomoCOOK....bitte bei den Übersetzungen in englische Sprache EXAKTE Angaben/Übersetzungen zu den Produkten angeben.
    Ausserdem fällt immer wieder bei den Kommentaren Fragen zu den Regionen in verschiedenen Ländern auf.....entweder hören die Zuschauer nicht richtig hin, oder es müsste besser betont bzw besser erklärt bzw auch auf einer Landkarte des jeweiligen Landes gezeigt werden.....

    How is it possible to make a living out of so few cows, comfortable enough to have a modern milking shed, and all this without feeding them any grains? Cows would produce less than half of the expected. Something's fishy......

      As the video goes into, they are also growing and selling barley, ie. to the local brewery. It's not just the cows, they talk about 'many different pieces' keeping the farm going. Who knows? Maybe the son even works repairing other farmer's machinery. In such a short video, it's not possible to go into great depth but most farms have several income streams.

      Government support, probably, since they're part of a small group of organic farmers growing a specialty crop. And it's not like the episode shows the full extent of their farm operation and other sources of income.
