I usually use the Swiss Meringue buttercream for filling. But I can add either seedless raspberry jam or Nutella. Pistachio is also delicious! They mix so well with the buttercream!!

I made three bowls of choc ganache today and the third one went grainy I thought it wouldn’t set but it did. Think my cream got too hot when I poured it over the choc.
I made a Christmas version of my dark chocolate ganache this week for my Macarons; Great present for Nicholas 😁 So I did my dark chocolate ganache as always (200g dark rich chocolate and 200g of cream) but added some cinnamon, orange peel, clove and in german called „Lebkuchengewürz“ to it. (This is the kind of spice you use to make ginger bread with) Tastes soooo good. But I think it’s way to rich in calories. Like it’s really (!!!) heavy while the Macaronshells itself are such a light/fluffy dessert. So maybe I’ll just use this filling for a little extra in the middle of maybe a fruit-filling 👌🏻

Hello, I loved your recipe. I need one help after using this filling in my macarons they turned soft the next day. Is this normal ? How do I stop this. i also need help with my shells Browning.. they turned brown. in first try i kept the macarons on the middle rack at 160. In the other batch I kept on the lower rack and I tried taking the off immediately after Browning but the got stick to the parchment paper. third i tried on lower with low temperature at 150 to 155 c ,they baked well but cant stop Browning... can you please help me with this? sorry for so may queries.. Thank you so much in advance .
shilpa karekar the browning of the cookie it’s probably because your oven temperature is too hot. It’s normal that the cookie softens slight in the fridge try storing them in an airtight container at room temp autre to slow down this process. I hope this was helpful!

Hey Matt, I make a delicious raspberry and dark chocolate ganache which works amazingly well in macarons. Heat up 150ml of homemade raspberry coulis; once hot, pour over 200g of callebaut 70% dark chocolate. Once it's melted, stir well then mix in 40g of butter. Enjoy with anything!!😉

I melt my chocolate in a double boiler and then whisk in the warm cream for my ganache.
