Question looks like you’re using a silicon spatula for the macaronage step ( I’m confused what type of spatula do we use if not silicon or rubber ) when folding in the flour mixture into the egg white mixture ?

I do know that some people have used all purpose flour, but I am not sure exactly how they substitute. I’m sorry! Maybe someone here has tried it and can chime in with a recommendation.

Your recipe says the amount stated yields 25 macarons. Are these macaron shells or sandwiched macarons because I only want to make a small quantity. Thank you.
Adjustments with macarons are risky, if you have a good handle on pulling them off as written you can try experimenting but because they’re so finicky I can’t say for sure they will turn out.

Just a warning the ganache is superrr runny if you follow the linked recipe. Not suitable for filling a macaron at all. You'll want a ratio of at least twice as much chocolate to cream for a thick ganache whereas this recipe is one to one. Too runny.

Black chocolate cocoa powder will work here. It shouldn't change anything other than the flavor. :)

I’ve never weighed them after aging. I suspect the difference in weight would be quite small.

There are recipes with all purpose flour. I believe there are even ones for gluten free. Just look around UA-cam or the internet.

325 seems high. I’ve always seen like 290 or 300. What are your thoughts. What kind of oven are you using? Is it on fan?
I don’t use a fan oven. 325 is what works best in my kitchen but everyone’s kitchen is different :)

You should flip your pan upside down for better airflow during baking. 😊

Also, you should refrigerate your macarons for 24 hours to mature them.

It’s couverture chocolate. The videos are really informational they aren’t meant to bake along to.
