- Smashing cucumbers instead of cutting them creates a jagged surface that absorbs dressing like a sponge. This week I'm going to show you how to make this easy Asian cucumber salad recipe with a Japanese style sesame dressing that's nutty and loaded with umami.

Such violence on Sunday morning, lol !! So simple and gotta be delicious. Probably tons of subtle variations aswell:))
Another one on the list !!
Cheers Marc 🌱
😅Yes, this is a base recipe but I do this a little differently every time. Chili paste, chili oil, black pepper, ginger, garlic, sugar, and black vinegar, are all ingredients I might add in depending on my mood. Hope you enjoy it!
@@NoRecipes yummmm !!
Now that looks tasty and refreshing. That would be great right next to a big ol' fat ribeye.
Ron, you’re a genius! Hope you’re doing well!
That looks like a flavour bomb! This video was super fun Marc. 🙌
Take care and have a great week,
Annette 🌺
Thanks Annette! I took some inspiration from @maplecook . Hope you’re having a fantastic week!
Oh wow! There's an amazing restaurant here that specializes in regional Chinese cuisine, and they do a smashed cucumber salad that we're massive fans of. I adore your recipe! Looks like perfect refreshment! Thank you Marc!
Thanks Susan! This dish has Chinese roots but I think it's become pretty popular all over Asia and the technique works with any dressing.
Really good edit on the smashing part!
Thanks!
Will definitely give it a try. It looks and will taste super refreshing. Thank you Marc !
You're welcome Hani, I hope you enjoy it!
This salad looks so fresh and delicious ! Thanks for sharing !
It’s a nice change from all the cold weather food of winter. 😊
Gotta try this! Yummm❤❤❤ ty!

I am going to make this, it looks wonderful 👨🍳👌Thanks for this great video, I enjoyed it 😎
You're welcome, I hope you enjoy!😃
Hello Marc All I can say is that this is brilliant so easy sandman I got all the stuff all I need is a so I'm going to run to the store tomorrow and get some cucumbers cuz this looks delicious and my God it's so simple thank you again for sharing your recipes I hope you're great health and you have a great day and brother like always your friend Nicholas in southern Nevada 🤗
Hi Nicholas! Thanks as always for your kind comments!🙏🏽 I hope you enjoyed this! The technique works with cucumbers with any dressing so I hope you find some other uses for it as well! Take care my friend!
Love the special effects! 😂 My dad made this for Memorial Day. It was very delicious!
Thanks! I'm happy to hear you enjoyed it!
Again, I can't even understand how this tastes so good!🤯 I make cucumber salads all the time, but they never come close to the flavor of this. Thank you, Marc!
The technique works for any dressing too😉
The answer is quite simple: Marc is a genius. A muthaf*ckin' GENIUS.
This looks and sounds so delicious!'
And the smashing was hilarious!
😆
Thanks!
yummmmy!!!
Thanks Miranda!
I SOooo need to make this… grrrr 😂
It works well with Lebanese or hot house cucumbers if you have trouble finding Japanese ones.
oh i must try this! i bet the liquid from squeezing the cucumbers would make a light + airy saline solution for a cocktail
It's funny that you mention that. This one is going to be pretty salty, but when I make Hiyajiru (where the cucumber is sliced very thinly and you extract more liquid from them), I sometimes strain the liquid and make a cocktail with mezcal and lime juice.
Well, you can't call that "tasteless violence"!😂
🤣
Hey Marc, thanks for a great recipe! I had a question: what might pair best with this kind of salad? I was thinking the crunchiness might go well with some grilled fish or even gyoza. Any personal favourites?
And though I've said it before, I appreciate how much effort you put into clear presentation with a dash of humour. I'm personally not usually a fan of overly edited cooking vids, but I think you were very entertaining here. Your passion is clear.
Thanks Spencer! Honestly this salad goes well with a lot of dishes. On one hand it adds a refreshing taste and texture so it’s nice for richer foods like steak or stewed pork belly. On the other hand it’s also kind of like a pickle so it works for rice dishes like various types of donburi as well. I think the flavor and texture contrast would also make it work great with fish or gyoza as you suggested.
@@NoRecipes Wonderful, thank you!
Cn ad onion oso,so nice yumy,Bes salad, pls reply
Yea, some chopped scallions would go great with this!
Was that MY cider bottle, bro? hahahaha!
The Sponge Bob voice! Natsukashii!! lmaooooo
(How was the cider, btw? I hope it wasn't horrible...)
😁
@@kathcares Ah, Ms. Dixon. We've been waiting for you. haha
Hahaha I drew a new graphic but I reused the narration from that video. As for the bottle it was just a wine bottle, I haven't opened your cider yet. Been saving it for a special occasion which hasn't come around yet.
@@NoRecipes T'hat's a relief! I thought that you had cracked it open at Christmas, and when I didn't hear anything after, I was afraid that it had gone bad.
@@Maplecook That was the plan originally but our menu veered in another direction. I think I just need to pick up some pork chops and make a special occasion🤣
Bes salad of Al,cn ad vinega?pls reply
You can definitely add some vinegar for a little acidity.
Last time I tried making teriyaki sauce with mirin, since it’s the closest to find since it’s got sake in it and my store doesn’t have any sake besides Mirin only, will that work
Hi Tom, mirin does not contain sake (or at least it shouldn't) it's made using a different process from whole grain glutinous rice. Unfortunately most mirin sold outside of Japan (and even in Japan) is not true brewed mirin. It's usually just distilled alcohol with corn syrup and flavorings. For teriyaki sauce you can substitute it for sake by cutting the sugar in half.
@@NoRecipes okay cool, would you also list a recipe of how to make boneless crunchy teriyaki chicken on you website, I wanna try crispy teriyaki chicken
I'm posting a crispy chicken recipe either next week or the week after and you can finish it with teriyaki sauce. Here's an older recipe that will give you crispy skin: www.pbs.org/food/fresh-tastes/spicy-crispy-chicken/
@@NoRecipes okay, cool and then your next chicken recipe where I glaze it with the teriyaki sauce has the fried crispy and crunchy exterior right?
@@tomnguyen28 The skin is crisped there is no coating.
