  • Smashing cucumbers instead of cutting them creates a jagged surface that absorbs dressing like a sponge. This week I'm going to show you how to make this easy Asian cucumber salad recipe with a Japanese style sesame dressing that's nutty and loaded with umami.

      😅Yes, this is a base recipe but I do this a little differently every time. Chili paste, chili oil, black pepper, ginger, garlic, sugar, and black vinegar, are all ingredients I might add in depending on my mood. Hope you enjoy it!

      Thanks Susan! This dish has Chinese roots but I think it's become pretty popular all over Asia and the technique works with any dressing.

      It works well with Lebanese or hot house cucumbers if you have trouble finding Japanese ones.

      It's funny that you mention that. This one is going to be pretty salty, but when I make Hiyajiru (where the cucumber is sliced very thinly and you extract more liquid from them), I sometimes strain the liquid and make a cocktail with mezcal and lime juice.

    Hey Marc, thanks for a great recipe! I had a question: what might pair best with this kind of salad? I was thinking the crunchiness might go well with some grilled fish or even gyoza. Any personal favourites?
    And though I've said it before, I appreciate how much effort you put into clear presentation with a dash of humour. I'm personally not usually a fan of overly edited cooking vids, but I think you were very entertaining here. Your passion is clear.

      Thanks Spencer! Honestly this salad goes well with a lot of dishes. On one hand it adds a refreshing taste and texture so it’s nice for richer foods like steak or stewed pork belly. On the other hand it’s also kind of like a pickle so it works for rice dishes like various types of donburi as well. I think the flavor and texture contrast would also make it work great with fish or gyoza as you suggested.

    Last time I tried making teriyaki sauce with mirin, since it’s the closest to find since it’s got sake in it and my store doesn’t have any sake besides Mirin only, will that work

      Hi Tom, mirin does not contain sake (or at least it shouldn't) it's made using a different process from whole grain glutinous rice. Unfortunately most mirin sold outside of Japan (and even in Japan) is not true brewed mirin. It's usually just distilled alcohol with corn syrup and flavorings. For teriyaki sauce you can substitute it for sake by cutting the sugar in half.
