Delicious PAMBAZOS | Mexican Street Food ❤

- The first time I ever tasted PAMBAZOS was from a vendor in a food truck, and I was hooked. PAMBAZOS are hearty Mexican sandwiches smeared with refried beans then filled with potatoes and chorizo, shredded lettuce, sour cream, queso fresco and your favorite salsa. These PAMBAZOS can be filled with your favorite filling, toppings and salsa and will make a delicious meal perfect for family or when entertaining friends.
INGREDIENTS----------------
• 4 Bolillos or similar bread (Telera or French loaf)
INGREDIENTS FOR CHORIZO FILLING-----------
1 large russet potato (cubed )
8 oz. Chorizo
1/4 small onion finely diced
1 Roma tomato (diced)
1/2 tsp garlic powder
1/2 tsp onion powder
Salt as needed
Pepper as needed
2 1/2 Tbsp veg oil
SAUCE INGREDIENTS----------------
7 guajillo chiles
1/4 piece small onion
2 medium garlic cloves
Salt as needed
1/2 tsp dried Mexican oregano
1/4 tsp ground cumin
1 tsp chicken bouillon
1/2 C. water
•Vegetable oil for frying (as needed)
TOPPINGS---------------------------
YOU CAN CHOOSE YOUR FAVORITE... I CHOSE
Finely shredded lettuce
Sour cream
Queso Fresco
Cotija cheese
Refried beans
Favorite salsa
#pambazos
#mexicanstreettacos
#chorizo

Same here ive been cooking began prepping at 5 then by 12 cooked entire dinners for parties and cake decorating af 12 yrs old making chocolates at 14 wedding cakes 3 tier wedding cakes with flowers i made with royal icong and stamens hand painted even made icing lace hanging from edges of cakes and piping cornelia lace with a size 1 teeny tiny 1S cake tip one continuous never touching never overlapping teeny tiny squiggling string of icing that covers the entire cake each cake one beginning one ending never overlapping or touching any of the winding tiny lines. I would make huge parties for my kids birthdays my relatives every christmas tamales and 48lbs of fudge 126 italian shortbread 216 spritzer butter cookies 84 pinwheels 200 mexican wedding cookies 240 tamales chicken pork and chili cheese lumpia 240 lumpia and so much more. 3 days of cooking baking and freezing such a labor of love absolutely exhausting but the most beautiful happiest its not even work when you love what you are doing. I have made Rachels recipes never am i adding or doing my own spin because her way is delicious too. I think the best way to become an even better cook is not by closing your mind to only doing it your way...you cannot learn or perfect your cooking by never learning new things and even as a vieja im still learning because i love when someone like Rachel really shares her heart and soul in her cooking then so generously and with great love and care explains and teaches even us old dogs new tricks! I said the same thing she should be on tv food channel she is amazing.

Oh my......my mouth was watering. My dad used to travel a lot to South America. He would come back and talk about the food, I remember him mentioning papusas and now that I think about it, pampasos we're also something he would talk about. He would make his own chorizo and use it to make simple Mexican tortas. How I loved watching him cook as he told me about all his adventures. I marvel at my dad's accomplishments. He was born in a very small copper mining town in Mexico. He came to America with very little schooling, very little money and didn't speak any English. He worked very hard all his life to give my mother, brother and I a good life. We always went on vacations. In his later years he travel all around the world and met so many lovely people. He had a good and blessed life. Thank you for bringing back some comforting memories of my beloved father.🙏🥰🐕🇺🇸

Rachel, I have never had ANY kind of sandwich that had potatoes in them. Potato Salad on the side, potato chips on the side, too…..but I don’t understand potatoes in the filling. It probably will be good…..but I’m not sure I would ever make it. But it’s always great fun watching your videos no matter what you make.
I would assume this recipe came from leftovers of chorizo and potatoes (and sauce, beans...). And then they found out, "Wow! So good!" 😉
If you think of the bread like a flatbread/tortilla it makes more sense 😊
