  • Cassia trees are widely used for decoration as they have beautiful yellow or pink flowers. In SE Asia, the leaves and other parts of this tree are also used in cooking. Today Nok is picking her own tender cassia leaves close to home for use in making one of her amazing curries! Most ingredients are fresh from the garden. Cassia leaves can be bitter, and it is important to boil at least once (twice if you want less bitter) and discard the water. Of course, like many things from the vegetable world, especially those with a bitter taste, cassia is also used in traditional herbal medicine. Easy to make and delicious!

    In India we don't eat this, here moringa is popular, and it's called sahjan here
