Hi, do you have recipe for chocolate fillings?

Not yet currently. You may try to adapt from this recipe, just replace Matcha
powder with cocoa powder. No need to add glutinous rice flour for the paste if using it for angku kuih: mykitchen101en.com/matcha-japanese-green-tea-mung-bean-paste-filling-for-mooncake/

I am unable to purchase fresh coconut flesh, do you think dried coconut flakes work? I tried making the original mung bean and sesame recipes and both tastes like the one I had in Malaysia.

Not sure, you may try rehydrate dried coconut flakes by adding some coconut milk to it.

@@MyKitchen101en also I have a quick question, when I tried to mold the outside layer it’s very dry and when I tried to flatten it out, the skin just breaks apart. Also it’s hard to detach from the turtle molding. Am I doing it wrong? Some part of the Kuih will get stuck on the turtle molding even though I put a lot of corn starch.

Are you using the correct flour for the skin? It uses glutinous rice flour, not cornstarch. You need to add 60 g of hot water (about 70°C) to part of the flour. You may refer details and recipe at: mykitchen101en.com/pandan-angku-kuih-gula-melaka-coconut-filling/

@@MyKitchen101en I tried the red ang kuih and sesame flavor and both outside skin is very dry, I used the gluntinous rice flour for the skin and when I put it in the turtle molding I put a lot corn starch to prevent from sticking. But it still stick to turtle molding.

The dough should be dry if the ingredient used is correct. The dough should be soft but not too wet. Just press lightly with palm to fill the dough into the mould so that it won't stick. You may refer the detailed steps to see which part has gone wrong: mykitchen101en.com/pandan-angku-kuih-gula-melaka-coconut-filling/
