Lemon zest is actually a lemon peel grated very fine. If you don't have the tool she uses (it is called zester) you can use the finest side of your grater. And you have to grate only the yellow outer side of the lemon.

If you have over-salted any liquids, like soup, you can take a white potatoe, peel and slice it, then put it in the over salted liquid, boil it until the potatoe is tender and it will soak up salt! To some extent, any way! Perhaps not enough but enough to notice, and that could be enough in some cases! Try it! But it doesnt work on solid foods. Like meat or fish.

We just tried the Lemon Butter Salmon recipe. We made a half recipe with one small lemon. The salmon came out tasting very fresh and juicy with just enough lemon and butter favor. We left the salmon skin on and it also picked up lots of favor from the sauce. Thanks for sharing the recipe.
