    Elegant recipe! I used Ivory king salmon and served it over a bed of garlic mashed potatoes with freshly steamed green beans, spooning the sauce over everything. Phenomenal! My dinner guests said it was like eating at a high-end restaurant.

    I tried this recipe it is amazing. Simple yet flavourful, moist and buttery on the inside nice slight crisp on the skin and top. I used regular butter instead of compound and added minced garlic. The best recipe ever

      👍I also first used regular butter and garlick and it was delicious.Then I tried to make compound butter when I got the ingredients .

    Three years later and I still watch this video. One aspect of it that was extremely helpful was the don't break the butter sauce part of it, I applied that to a hot wing sauce I created that is as good as anything I can buy off the shelf. From this video I also learned why it makes sense to season from high up in order to evenly distribute the seasoning.

    I like how he heats and partial cook the lemon separately and then put it over the lemon. He didn’t tell what hurts were mixed in the butter. I can put few fresh or freshly dried ones from my garden. Thank you for this video.

      @@paulkazjack To Paul KJ: The tangy zesty lemon would seem nutritious and positive; however, the taste is too tart and bitter, especially for anything else than fish -- along with the not-too-hot and unhealthful sabotaging of butter with its calories and fat. I don't see the point, actually. Take slices of lemon separately and a dab of butter to the side.

    This is an example of real life cooking. Controlling the implements, the temperature of the pan, the temperature of the fish when it is almost done, and what the sauce is doing all at the same time is a balancing act for sure. It shows that even when things are not just absolutely perfect, the dish can still be very good. I for one appreciated seeing how the sauce was made.

    This, will now be my permanent go-to salmon steak recipe. It's delicious. I've been searching forever for a super easy salmon steak recipe with a sauce that doesn't mask the fish flavor. It didn't disappoint. It doesn't get any easier than this.

      I was a professional, headed up a 5 star in downtown San Francisco! Fish tends to cook longer after it's off the heat! I learned to take it off *just* prior to it being done. It's exquisite that way! Of course, only do that if you have the best ingredients! Enjoy!

    This is a good demo for fully cooked salmon. When salmon being fully cook, it become dry so a rich sauce is needed. Many people do not eat raw or less than fully cook fish, so pls hold your comment on overcook. This is one way to cook fish professionally.

      True, and it is a matter of preference, but you will never get any Michelin stars with this fish. I am a very ambitious modernist amateur cook with a serious professional kitchen at home - 1/1 GN combi oven with water and sewage connections and automatic washing system, professional gas/induction cook top, commercial extraction, chamber vacuum sealer, several circulators, etc. Stuff that many restaurants would be jealous of. I have eaten in the three restaurants topping the worlds 50 best 2018 list, among dozens of other seriously good world class restaurants, so I do think I understand what is generally considered good food. I am sorry, but this would not make it. This is more like something that I would expect to get from a petrol station along a country road.

    Tracey, a compound butter is a butter that has added seasonings, or spices to enhance the flavor of your dish. a garlic butter is a compound butter.
    thanks for the recipe Mike.
    a good butter for seafood is:
    1 shallot
    4 cloves garlic
    1 cup parsley
    2 teaspoons fresh thyme
    1 tsp kosher salt
    8 oz unsalted butter (softened)
    4 tablespoons Extra Virgin Olive Oil
    zest and juice of half a lemon.
    place the items in a food chopper in the order listed and pulse until each ingredient is chopped before adding the next ingredient. the butter should be soft before adding.
    once it is all mixed, then form it.
    place wax paper, or plastic wrap on the counter, spoon the compound butter out of the chopper onto the middle of the plastic wrap.
    then begin to roll it into a shape like a sausage. then refrigerate for 2 hours before using.
    store in refrigeration up to 10 days
    store in freezer up to 6 months.

    When it comes to fish and meat everyones idea of doneness is very personal. This was a very good visual of a different way of cooking salmon. I'm always looking to try different things which makes eating fun. Great job!

    Looks delicious and very simple. I prefer my salmon slightly less well-done but that is purely my personal taste (which applies to all fish) and I fully accept that for general consumption many people prefer it cooked for longer and some prefer it almost uncooked.

    Why he cooked the flesh side first is because it puffs up round and will not lay flat , the flesh side is cooked first.

      @@djmtelevision That is a great technique...The salmon will buckle up and make it difficult to cook evenly, but scoring as Ramsey did will help that, and cooking the skin side first does give you a crispier skin. I also really like adding butter to the pan with the salmon.

    Not heating up the butter and splitting it, is under-rated in this recipe. Make sure you have the pan on minimal heat. It should be hot enough to melt the butter. The moment you have enough heat, switch off the flame and let the butter melt through residual heat. You might end up with a transparent (split) sauce otherwise.

    Looks mouth watering, good job chef. I am sure it’s not over cooked, the tip of the temperature measure touched the pan so the temperature shown at 195 degree, a job well done.

      Yes, it is hygienic. First of all, it's a stove, which means there's no bacteria there anyway and second, he's cooking it, so the bacteria is dead.
