We had pizza we put on the line had light red sauce, fresh tomatoes, sliced turkey, green chile and spinach with mozz cooked well done, the tomatoes melt down nice and gives the sauce a natural sweetness to contrast the heat of the chile.

Neapolitan pizza is a special treat. Whenever, I go to Mohegan Sun, I try to stop and grab a bite at Don Pepe's where Jack said Roberto also works. When it warms up, I'll try to make it down to New London at try your pizza Jack.

I know you guys are cooks and you're probably better than me, but it normally works best if the parm goes on the pizza either first or directly beneath the mozzarella because the flavors compliment each other so well. Loving the videos!
