I think Tripe is about the only thing the whole family tried when I was a kid. And none of us liked it? Mum cooked it is Salted water. A friend said she should have cooked it in Milk and Onions? We were always told as long as we tried it once we could we could then refuse to eat it. Mum even refused to cook it again LOL.

I was in a little Hispanic diner in Connecticut. Sadly, we are not as culturally diverse here as we could be. I also got a similar response at a different place when I asked for tacos de lengua and tacos de cabeza. They thought someone was playing a joke on me. Offal has its part in New England cooking as well so I was already used to it. The hispanic way of cooking it is very tasty to me.
Historically, Mexican immigrants couldn't afford the pieces of meat that White folks ate on the regular, so made it a point to eat every piece of an animal that was edible, and make use of it. Menudo is made from parts of the cow that other people wouldn't dare touch, and that they could afford (because they lived hard lives and tripe and the honeycomb part of the stomach were thrown away at butcher shops so they could pay a decent price for it).To turn something so seemingly unappetizing, and create a dish that a lucky "white guy" like you can enjoy makes me so proud. To get a kick out of someone being genuinely intrigued that you want to eat such an exotic dish from their country, instead of just happy that you can relate to someone on culinary level, makes me sad. You aren't better than anyone, you don't know things, you just ate menudo. I don't laugh if i order some bland Americanized version of something somewhere and the waiter or waitress asks me if i know what i ordered. I just order. lmao

Same here. I prefer pozole which is similar except it has pork or beef meat instead of tripe. The hominy and chili flavor are really my favorite aspect. Also, there's something called trypophobia which means having an anxiety, fear or aversion to things with clustered holes in them.

Puertoricans make a stew called sancocho and we use both the tripe and feet as well...we keep the bones in the foot and just suck on the entire thing...lol..i know its sounds weird but as a kid this was the only time i was able to "slurp" my food..
In Puerto Rico🇵🇷 We called it Mondongo and its very good. Colombians they do it too. And funny thing We 🇵🇷sale Every Saturday cause is good after a night drink party or a weekend saturdat early with good made bread. I always thought Us only do that until i move to the states in i see it in Mexicans and Colombians Menu
I married into menudo. My husband's family uses flat tripe, so that is what I use. I find the honeycomb too chewy. Trim all the fat, soak it in salt water for a couple of hours & cut it up. When I make it, we always cook about 15-20 lbs, and it goes really quickly. My two sons and I, even though they're on their own, come and make it with me between Christmas and New Year. Love, LOVE menudo! I used trotters once, but one of the knuckles looked like hominy and I bit down on it and cracked my tooth. Since then, we use beef shanks - lots of collagen and less dangerous!
I’m seeing all these other people saying they love menudo. Even though I am Mexican, I cannot stand the smell or taste of menudo. I’m probably one of the few Mexicans that doesn’t like menudo.
It's weird beening the only one to not like something. Like I love these dishes, but for example all my family loves these specific ingredients: Nopales, mushrooms, green beans, and black olives. They are pretty much the only things I do not eat. And let me tell, you even though I Will Not eat them, I feel like I am missing out.
I think I like this series more than Bugmas (as fun as that is to watch) because you're making recipes with these parts of animal I have never seen let alone EATEN. It makes me want to branch out and try these different cuts of meat and they really aren't as scary as they seem to be :) Thanks Emmy!

Other than a dash more salt (my preference), darn good recipe, Emmy! Oh, I almost forgot, you can garnish with Lime, Cilantro, Raw Onion, Cabbage, and/or Radish. In San Antonio, Texas and Northeast Mexico, we eat Menudo with Flour or Corn Tortillas; in El Paso, Texas and around Chihuahua, Mexico, they eat Menudo with French Bread. :)

Wow Emmy not even i as a mexican know how to make menudo because of its difficulty 😅 Anyways my co-workers have told me that when you make menudo you gotta make sure to get rid of some "smell". I dont know what they mean about that since i never buy menudo except for the canned one. But one of them said she lets it sit on water with lime for overnight before she cooks it. Do you think you can try that? I'd like to know what difference you notice.
I’m not Emmy but I think I can answer your question . In Haitian culture (actually in a lot of island/Caribbean cultures) we take the cleaning of the meat very seriously . A lot of times certain parts of the meat are very potent and when cooked that strong smell can make the meal unappetizing to eat , so to avoid that the meat is thoroughly “cleaned” before hand with things such as vinegar or/and lemon to eliminate that strong smell of raw meat , which makes the meal more appetizing to eat cause your know stuck with a wrenching smell .
Lullhood true I live in a boarder town in the US and Mexico. This means that there are many different families that come up with their own variations (because the have lived here for many generations) so they don't know the original process. There are some people that don't clean the meat very well and ruin the dish.
MAGGIE_CHI yup! when my mom would make menudo she would leave it soaking overnight in the sink with A LOT of lemon juice and vinegar to kill the smell so like basically friday night it’d be in the sink soaking so we’d order pizza or something lol and saturday in the morning we’d starve until lunch while she made it lol and eat it for lunch and dinner ☺️ and leftovers the next day too lol i have so many fond memories attached to this damn stew haha

Woah, my mouth is watering! In my house we do another variation of the soup. It is called "Mole de panza".(not to sure how it translates? Stomach curry/stew?) It is just the stomach maybe w/or w/out the pig feet, and garbanzo beans. It is a tomato base soup with the same chilis. Also, the stew is much more rich/thick and you don't use oregano you use epazote (wormseed). I think it's topings are only lime and onion, no radish. Both the Mole de panza and the Menudo are great stews. Love them. OH God can't stop salivating.
I'm Cambodian American. Some Cambodians eat boiled beef tripe with rice and a lime sauce which consists of black pepper,salt ,and a little water. We also add it to certain soups.:)
Love me some menudo! My supermarket has frozen tripe,, already cut up, and posole in a bag. I cook them very similar to the way you do it, with some smoked trotters, and onions, all in a slow cooker. Start it in the evening, and it's perfect the next day.

No offense but I hate tripe. I used to have it as a kid when my grandma made cacao which is a Peruvian potato based stew with chicken and tripe. I hated the tripe and my parents always forced me to eat it
You did good Emmy. Although a couple of things are off, we (or at least my family's recipe) don't put in hominy. We use that for pozole only. Also we don't add pigs trotter because it's a little too fatty, but we do love pickled pigs feet. Love this series. Happy holidays ❤
My husband is Mexican and he likes his mom's menudo but that woman is a friggin fantastic cook. It's definitely not my thing, not because of it being stomach but just because I'm not a big meat eater to begin with (but I'm certainly not a vegetarian). I did try it though. Most people I've heard talking about it always bring up that it's a good cure for a hangover. I was surprised Emmy didn't mention that part, to my knowledge, it's quite well known to be a hangover remedy.

Okay this could just be me being weird but, can we just take a moment to appreciate how beautiful honeycomb tripe is? It’s so delicate and intricate, and the fact that its that milky white makes it look a little like lace.

DolliLoxz maybe research a bit more about carnivore stomachs? Because those are only 1/7 of the lengths of ours. I am not saying we are only meant to eat meat, in fact we are able to eat everything(hence why we call us omnivores), but the amount of meat some people eat actually causes them to have built up in their digestive tracks. The meat is literally rotting in there. Pretty disgusting, if you ask me, vegan or not.

Also animal cholesterol clogs our arteries which leads to heart disease, and all animal cholesterol turns our bodies acidic, they’re meant to be alkaline. So our bodies uses calcium and phosphate from our bones to try and fix that, which in turn creates osteoporosis. It’s researchable.

Some people use cow feet instead of pig trotters. I’ve gotten lazy and sometimes use gelatin instead of either for menudo. Also I tend to be cheap and not buy the photogenic honeycomb tripe but the boring stuff. A kitchen tool that’s great for removing skins from soaked dried peppers (also tomato skins, etc.) is a food mill. (I had to abandon my food mill due to circumstances, and sometimes just purée peppers in a blender, hoping to break up the skins enough that I don’t notice them.) Food mill is way better than a sieve and more fun to use.
We have here in greece a similar recipe. It's called "patsa" and it's a remedy for hangover. We boil the leg and stomach with water only ,and we serve it either with lemon or garlic and vinegar. I prefer the second... I find it yummy but the most people don't like patsa beause it is smelly.

My grandma LOVES making menudo, especially during the holidays when it’s very very cold. She sometimes makes it with stomach or tongue but I’m not a fan of that so she makes a pot with chicken :-)
If you ever want to try cooking trotters again please try this method. Clean and rolling boil for about 10 minutes . Dump that water! Now season and continue cooking (skimming any muck that might form on top) . I guarantee you will find the results more satisfying ❤
The abomasum is definitely consumed. Particularly in Florence, Italy where it is used in Lampredotto, a classic Florentine street-food sandwich. It might be rarer than the other forms of tripe, but I don't think it's fair to say that it isn't really consumed much when it has been the major component of a classic sandwich consumed by an entire city for centuries.

I like to scrub my tripe with lemon and salt, as it removes all the smell from the tripe and makes it taste better

I think I like this series more than Bugmas (as fun as that is to watch) because you're making recipes with these parts of animal I have never seen let alone EATEN. It makes me want to branch out and try these different cuts of meat and they really aren't as scary as they seem to be :) Thanks Emmy!

Menudo is amazing! I love it with lots of hominy, chopped up onion and lime! I love the texture and mouthfeel of honeycomb tripe. My dad will be making some tomorrow and I can’t wait! Loved watching this video as well ❤️
Other than a dash more salt (my preference), darn good recipe, Emmy! Oh, I almost forgot, you can garnish with Lime, Cilantro, Raw Onion, Cabbage, and/or Radish. In San Antonio, Texas and Northeast Mexico, we eat Menudo with Flour or Corn Tortillas; in El Paso, Texas and around Chihuahua, Mexico, they eat Menudo with French Bread. :)

Anyways my co-workers have told me that when you make menudo you gotta make sure to get rid of some "smell". I dont know what they mean about that since i never buy menudo except for the canned one. But one of them said she lets it sit on water with lime for overnight before she cooks it.
Do you think you can try that? I'd like to know what difference you notice.
MAGGIE_CHI My mom boils it with baking soda first, get rid of the smell and leaves it supper soft it melts in your mouth.
I’m not Emmy but I think I can answer your question . In Haitian culture (actually in a lot of island/Caribbean cultures) we take the cleaning of the meat very seriously . A lot of times certain parts of the meat are very potent and when cooked that strong smell can make the meal unappetizing to eat , so to avoid that the meat is thoroughly “cleaned” before hand with things such as vinegar or/and lemon to eliminate that strong smell of raw meat , which makes the meal more appetizing to eat cause your know stuck with a wrenching smell .
Lullhood true I live in a boarder town in the US and Mexico. This means that there are many different families that come up with their own variations (because the have lived here for many generations) so they don't know the original process. There are some people that don't clean the meat very well and ruin the dish.
MAGGIE_CHI yup! when my mom would make menudo she would leave it soaking overnight in the sink with A LOT of lemon juice and vinegar to kill the smell so like basically friday night it’d be in the sink soaking so we’d order pizza or something lol and saturday in the morning we’d starve until lunch while she made it lol and eat it for lunch and dinner ☺️ and leftovers the next day too lol i have so many fond memories attached to this damn stew haha

In Spain we have a dish made with the same part called “callos”!
Woah, my mouth is watering! In my house we do another variation of the soup. It is called "Mole de panza".(not to sure how it translates? Stomach curry/stew?) It is just the stomach maybe w/or w/out the pig feet, and garbanzo beans. It is a tomato base soup with the same chilis. Also, the stew is much more rich/thick and you don't use oregano you use epazote (wormseed). I think it's topings are only lime and onion, no radish.
Both the Mole de panza and the Menudo are great stews. Love them. OH God can't stop salivating.

I'm Cambodian American. Some Cambodians eat boiled beef tripe with rice and a lime sauce which consists of black pepper,salt ,and a little water. We also add it to certain soups.:)

Love me some menudo! My supermarket has frozen tripe,, already cut up, and posole in a bag. I cook them very similar to the way you do it, with some smoked trotters, and onions, all in a slow cooker. Start it in the evening, and it's perfect the next day.

Here in the Dominican Republic we do eat that but in our case it is called "Mondongo". It's really delicious and nutritious too, we usually eat it with rice and add hot sauce for more taste.

No offense but I hate tripe. I used to have it as a kid when my grandma made cacao which is a Peruvian potato based stew with chicken and tripe. I hated the tripe and my parents always forced me to eat it
Same, my family is Dominican and I absolutely hated tripe growing up when my parents made it. But I was never forced to eat it thank goodness.
You did good Emmy. Although a couple of things are off, we (or at least my family's recipe) don't put in hominy. We use that for pozole only. Also we don't add pigs trotter because it's a little too fatty, but we do love pickled pigs feet.

My husband is Mexican and he likes his mom's menudo but that woman is a friggin fantastic cook. It's definitely not my thing, not because of it being stomach but just because I'm not a big meat eater to begin with (but I'm certainly not a vegetarian). I did try it though. Most people I've heard talking about it always bring up that it's a good cure for a hangover. I was surprised Emmy didn't mention that part, to my knowledge, it's quite well known to be a hangover remedy.

As I mentioned yesterday, last week I made a _menudo verde_ with a purée of green tomatoes and tomatillos, plus a bunch of beef sweetbreads, and it is flat-out amazing. (We'll be eating on it for a week or so.) I didn't convince my son that it's good, but my wife said she's just fine with me making of it again.
Menudo is also a Filipino dish.

DolliLoxz maybe research a bit more about carnivore stomachs? Because those are only 1/7 of the lengths of ours. I am not saying we are only meant to eat meat, in fact we are able to eat everything(hence why we call us omnivores), but the amount of meat some people eat actually causes them to have built up in their digestive tracks. The meat is literally rotting in there. Pretty disgusting, if you ask me, vegan or not.

That being said, humans are omnivores so we're designed to be right in the middle between herbivore and carnivore

Also animal cholesterol clogs our arteries which leads to heart disease, and all animal cholesterol turns our bodies acidic, they’re meant to be alkaline. So our bodies uses calcium and phosphate from our bones to try and fix that, which in turn creates osteoporosis. It’s researchable.

Some people use cow feet instead of pig trotters. I’ve gotten lazy and sometimes use gelatin instead of either for menudo. Also I tend to be cheap and not buy the photogenic honeycomb tripe but the boring stuff.
A kitchen tool that’s great for removing skins from soaked dried peppers (also tomato skins, etc.) is a food mill. (I had to abandon my food mill due to circumstances, and sometimes just purée peppers in a blender, hoping to break up the skins enough that I don’t notice them.) Food mill is way better than a sieve and more fun to use.

That actually looks really yummy. My grandmother makes a white/clear broth menudo and it’s so good, can’t wait for New Years bc that’s when we eat it.
We have here in greece a similar recipe. It's called "patsa" and it's a remedy for hangover. We boil the leg and stomach with water only ,and we serve it either with lemon or garlic and vinegar. I prefer the second... I find it yummy but the most people don't like patsa beause it is smelly.

We prepare tripe as a traditional dish in our culture as well. It's super delicious when mixed together with intestines, lungs and the spleen.

My family's from Nigeria and we make tripe all the time. It's delicious. We make it with our own special tomato soup.
My grandma LOVES making menudo, especially during the holidays when it’s very very cold. She sometimes makes it with stomach or tongue but I’m not a fan of that so she makes a pot with chicken :-)
If you ever want to try cooking trotters again please try this method. Clean and rolling boil for about 10 minutes . Dump that water! Now season and continue cooking (skimming any muck that might form on top) . I guarantee you will find the results more satisfying ❤
Mondongo!!! In Argentina we have a dish using the stomach called Mondongo. It's made with stomach, tomato sauce, chorizo, potatoes etc. Super tasty
The abomasum is definitely consumed. Particularly in Florence, Italy where it is used in Lampredotto, a classic Florentine street-food sandwich. It might be rarer than the other forms of tripe, but I don't think it's fair to say that it isn't really consumed much when it has been the major component of a classic sandwich consumed by an entire city for centuries.
