@@JetLagWarriors for even more success in the kitchen with that recipe, you must talk with Ivana to make the same soup(ciorba) but instead of tripe she must use chicken, mostly upper part of the foot, the pulp. With that kind of sweet tasty and soft meat, that soup will be amazing and the preparation will be much shorter because several boiling tripe is not necessary any more. The "new" recipe is called "ciorbă Rădăuțeană"(don't try to spell this at home 🤣🤣), better taste, easier to cook and close as consistency as "ciorba de burtă ". Don't forget the sour cream and the garlic. 😎💖 Enjoy!

In order for the soup to be better, I recommend putting the boiled vegetables and a beef bone together with the belly. the part of bones with meat that we use is taken from the back leg of the animal gives a special taste.

Funny story as a Romanian i did travel to Japan few years back before pandemic Covid and then i did try myself octopus tentacles & calamari soup and i was thinking in my head just like in this case of this mother but after my friend took me to best restaurant he knew, i did enjoy that soup more as long as i stood there..
guys, you are incredible ambassadors for Romania and the ciorba looks like it is supposed to! Small hint: the sourness is actually given by the vinegar; mashed garlic and vinegar are served on the side so that everyone can add to their own taste. And I suppose these are also used to hide a little the tripe flavour :)) Kudos to your mom for being brave enough to try this!

Ivana is with no doubt an awesome cook. I'm a Romanian and never been able to go over the mental block. I tasted ciorbă de burtă twice in my life only with the tip of my tongue (and I'm over 40's). It tasted good but that was all for me. You guys are awesome and I really hope your mother really liked it. At some point I was like poor woman, she is on camera, what can she say, she just wanna be polite. I really hope she liked it and now that I've seen Canadians eating that maybe I might reconsider my mental block 🤣 You guys are awesome!

I tried only once in my life and I do not like it. Ciorba rădăuțeana is similar, but much better. I am sure Steve and Ivana will return to Romania, I will recommend them ciorbă rădăuțeană, maybe in Rădăuți.

Won't even critique the broth. There are obviously some improvements that can be made. but keep in mind that is a very difficult recipe. So much so that even most restaurants can't even make it properly. But you were brave, so we all have to appreciate that

The tripe is cheaper in Ro because it usually needs a little more cleaning, and you have to boil it for a loooong time until it's tender enough, and you boil it along with the veggies in the soup and maybe a piece of sirloin or a bone with marrow still in, for extra beef flavor. That's the basics of it... the rest of the recipe kinda differs from person to person and their own taste. Some take out all the veggies (cooked whole, not chopped) and the meat and make "salata de boeuf", some just leave the veggies in, some strain the soup, blend the veggies and re-add them to the broth for extra texture.... if you used the bone, you scoop out the marrow to leave in the soup after it's cooked... then you add the vinegar, the "dressing" of egg and sour cream (personally I found that if they're room temp when you're about to add them and then you ladle in some of the piping hot soup into the mixture, they blend in better with the finished product and don't curdle) and at the very end you add the minced garlic... but then again, that's how I make it, like I said above, to each their own. I gotta agree on the smell though... it smells bad when it's raw, it smells bad when it's cooking... but the finished product will have your stomach rumble with hunger. P.S. the yellowness generally comes from the fat of the meat/ tripe/ bone.

Hi, when you boil the tripe, put 2 bay leaves in the water and half of lemon juice with the lemon also, and a bit of salt, and let it boil like that, not jus tin the water, u will thank me!

you can make this soup with chicken breast. everything is done exactly the same but the beef belly is replaced with chicken breast. is called ciorba Rădăuțeana.

Wow that tripe is so cheap there, here is Nova Scotia what I seen is like 11 dollars which is why I never bought it. My husband is from Romania and it’s his favourite soup
You could use pig feet and skin if you don't like tripe. Actually I don't like tripe but i love ciorba de burtă. Grandma used to make me it out of pig skin and pig feet it tastes the same the making is a little different but it works for someone that hates tripe taste or soup taste in general. We clean the tripe with salt and water and even vinegar and water so it doesn't smell any more. Don't boiled it imediately because that's way it smelled bad. Actually some of the vinegar taste is not because we add it is because we clean the tripe with it and then we cook it.
I do the same. I boil the tripe first and change the water to tone down the tripe flavour. I don't like the smell at the beginning as well, too strong. PS. If someone doesn't like the rubbery testure, you can boil the tripe longer and you'll no longer have the rubbery texture.
Yummyyyy....belly!!! Best Romanian dish! I tasted also the Turkish, Greek and Cypriot versions but the Romanian is the best. To enrich the taste i recomand you to boil the belly together with o piece of beef bone .
I was planning to do the soup for Christmas but I didn't get the chance it was to busy, and is sooo expensive now, I buy it at Blue Sky supermarket and a tray is now 10 $ or so. At beginning I made tripe ciorba only because my husband likes it and then I started to like it too ,like your mom I don't go crazy about the tripe pieces but the soup is great😁

You boiled the tripe 3 times, some of us do it up to 5-6 times. That is why the tripe loses the flavor. Thanks for making this wonderful dish.

Try making same soup (same ingredients and steps) but using chicken.Your mum will lovet it. It will be same taste but having chicken meat.

We clean the tripe with salt and water and even vinegar and water so it doesn't smell any more. Don't boiled it imediately because that's way it smelled bad. Actually some of the vinegar taste is not because we add it is because we clean the tripe with it and then we cook it.

I do the same. I boil the tripe first and change the water to tone down the tripe flavour. I don't like the smell at the beginning as well, too strong.
PS. If someone doesn't like the rubbery testure, you can boil the tripe longer and you'll no longer have the rubbery texture.
Yummyyyy....belly!!! Best Romanian dish! I tasted also the Turkish, Greek and Cypriot versions but the Romanian is the best. To enrich the taste i recomand you to boil the belly together with o piece of beef bone .

I was planning to do the soup for Christmas but I didn't get the chance it was to busy, and is sooo expensive now, I buy it at Blue Sky supermarket and a tray is now 10 $ or so. Good job Ivana, Steve your mom is so sweet. At beginning I made tripe ciorba only because my husband likes it and then I started to like it too ,like your mom I don't go crazy about the tripe pieces but the soup is great😁
