- Ciorba de burta (cow stomach / tripe soup) is one of the most popular Romanian traditional food, and Ivana's favorite. Ivana cooked ciorba de burta for Steve's family to try in Canada. His mom has never tried tripe before! So it was interesting....check out the vlog!

as a side note "Ciorba Radauteana" is the same as "Ciorba de burta/Tripe soup", but with chicken instead of tripe, it was invented by a woman cook for her husband

@@JetLagWarriors for even more success in the kitchen with that recipe, you must talk with Ivana to make the same soup(ciorba) but instead of tripe she must use chicken, mostly upper part of the foot, the pulp.
With that kind of sweet tasty and soft meat, that soup will be amazing and the preparation will be much shorter because several boiling tripe is not necessary any more.
The "new" recipe is called "ciorbă Rădăuțeană"(don't try to spell this at home 🤣🤣), better taste, easier to cook and close as consistency as "ciorba de burtă ". Don't forget the sour cream and the garlic. 😎💖

(even if I dislike ciorba de burtă) 😅 I still pressed like on the video cuz Ivana cooked something romanian and Steve still wears his Rapid T-Shirt. (I m not even a Rapid fan but at least he represents something from Romania) 😁👍 (as a romanian myself) Gotta appreciate his appreciation for romanian stuff.
Ivana is with no doubt an awesome cook. I'm a Romanian and never been able to go over the mental block. I tasted ciorbă de burtă twice in my life only with the tip of my tongue (and I'm over 40's). It tasted good but that was all for me. You guys are awesome and I really hope your mother really liked it. At some point I was like poor woman, she is on camera, what can she say, she just wanna be polite. I really hope she liked it and now that I've seen Canadians eating that maybe I might reconsider my mental block 🤣

guys, you are incredible ambassadors for Romania and the ciorba looks like it is supposed to! Small hint: the sourness is actually given by the vinegar; mashed garlic and vinegar are served on the side so that everyone can add to their own taste. And I suppose these are also used to hide a little the tripe flavour :)) Kudos to your mom for being brave enough to try this!

Funny story as a Romanian i did travel to Japan few years back before pandemic Covid and then i did try myself octopus tentacles & calamari soup and i was thinking in my head just like in this case of this mother but after my friend took me to best restaurant he knew, i did enjoy that soup more as long as i stood there..

I was planning to do the soup for Christmas but I didn't get the chance it was to busy, and is sooo expensive now, I buy it at Blue Sky supermarket and a tray is now 10 $ or so. Good job Ivana, Steve your mom is so sweet. At beginning I made tripe ciorba only because my husband likes it and then I started to like it too ,like your mom I don't go crazy about the tripe pieces but the soup is great😁

from what I know, everybody boils the tripe before cooking it. it's the stomach so it needs to be cleared before eaten.

Nobody in my ancestry line has ever liked tripe soup. My grandpa didn't like it, his grandpa didn't like it, his grandpa's grandpa never liked it. There's no way I'll ever get close to tripe soup.
I love the soup but I have never cooked it, will only eat it at a restaurant.
I tried only once in my life and I do not like it. Ciorba rădăuțeana is similar, but much better. I am sure Steve and Ivana will return to Romania, I will recommend them ciorbă rădăuțeană, maybe in Rădăuți.

Try making same soup (same ingredients and steps) but using chicken.Your mum will lovet it. It will be same taste but having chicken meat.

Bro... Even in Romania "ciorba de burta" is really hard to master. Really, it's a particularly very complicated romanian dish. We, romanians, are VERY critic to our restaurants "ciorba de burta". So, I am really grateful that Ivana tried again this dish. You are really wonderful and enjoying.

Btw, I also don't really like the texture myself, but I love the soup itself (the liquid and vegetables).
And yes, there are different ways people cook it, but as long as people like it, that's all that is important.

In Brazil we have two dishes very similar to that one: mocotó and dobradinha. They are common (at least) in Southern Brazil. I bet you will like it too (:

In Romania, with this soup is a relation of love hate, some absolutely love this, some don’t. Most of the people love this but there are also some people that hate this, but not because of cow stomach, but because of weniger in soup.

In order for the soup to be better, I recommend putting the boiled vegetables and a beef bone together with the belly.
the part of bones with meat that we use is taken from the back leg of the animal gives a special taste.

You have made all Romanians proud ! ..at least the ones that coock and/or eat tripe soup ! We put hot vinegar (vinegar that the chillies were marinated for the winter ).
The previous fail of your broth ,was caused by the fact that you did not prepared the broth itself (long time boiling the cow bones) . To that broth that has colagen and flavour of beef ,it is added the galic and vegetables and later the pre boiled tripe . It does not matter that the romanian one was frozen .The packed one (that you had în România) it was preboiled and cut to size ( I cut it în cubes) . Hope all of you enjoied it ! Xxx

Ivana, I appreciate that you love cooking, not many people are doing this nowadays. This is the healthiest choice too, also it's very smart to take recipes of dish you like and try doing it yourself. Btw, u might wanna over your hair so you don't risk any hair strands landing in the food, as I did few times and now I learnt my lesson. 😁 Bon appetite, love you guys! 💗

The tripe is cheaper in Ro because it usually needs a little more cleaning, and you have to boil it for a loooong time until it's tender enough, and you boil it along with the veggies in the soup and maybe a piece of sirloin or a bone with marrow still in, for extra beef flavor. That's the basics of it... the rest of the recipe kinda differs from person to person and their own taste. Some take out all the veggies (cooked whole, not chopped) and the meat and make "salata de boeuf", some just leave the veggies in, some strain the soup, blend the veggies and re-add them to the broth for extra texture.... if you used the bone, you scoop out the marrow to leave in the soup after it's cooked... then you add the vinegar, the "dressing" of egg and sour cream (personally I found that if they're room temp when you're about to add them and then you ladle in some of the piping hot soup into the mixture, they blend in better with the finished product and don't curdle) and at the very end you add the minced garlic... but then again, that's how I make it, like I said above, to each their own. I gotta agree on the smell though... it smells bad when it's raw, it smells bad when it's cooking... but the finished product will have your stomach rumble with hunger. P.S. the yellowness generally comes from the fat of the meat/ tripe/ bone.
