If you want to apply a general transformation on an object in Z-axis then:
For example, you want to move the object in the Z-axis then press G Z and drag the mouse.
Similarly, if you want to scale an object in Z-axis then press the shortcut key of scale (S) and then press "Z" key for selecting the Z axis and finally drag the mouse .
