Exactly! I was so focused on saving Cuttlefish, getting to see Mr. Grizz and on how fun the rocket stage was that I completely forgot our original objective!
Yeah. When I was playing it I totally thought this would make a good splatfest battle theme, especially because we only have 2 now (unless the demo was missing one. Didn't cake vs ice cream also only have 2?)
It was entirely forgotten after you get thrown down into Alterna, nobody mentions it at all until you randomly find it in the giant tube. This could be a way to further the idea all over that the Octarians vs Inklings thing is over and done with, given that taking the Great Zapfish is like the Octarian's trademark. The Great Zapfish is, in a weird way, connected to Evil Octos. Nobody cares about it because nobody cares about Octarians. Or I'm just looking into it too much

Already commented here but I feel like I should say this. This section is very, very similar to Octo Expansion, so is the entire story mode structurally, but this feels like more of a “oh shit we’re doing a thing? we’re doing a thing you go girl go find that old man or something woo!!!” which is very deep cut of them to do. They’re doing this to motivate you but mostly for the of the fun of it. Meanwhile Octo Expansion’s section like this is absolutely meant to be pure motivation for Agent 8, seeing as they’re aware the metro is fucked up and they want to get them out of there as soon as possible. Even though they would’ve made it out regardless, Off the Hook really cares about 8 and wants to cheer them on. This isn’t to say deep cut doesn’t care! They’re just not as well acquainted with the group besides trying to kick their asses, so there’s a lot more emotion behind Octo Expansion’s section.
I also get the vibe that Deep Cut is used to just doing sick background music while chaotic stuff is happening (perhaps due to them being related to divine saviors and the fact that music incites a magical hormonal reaction in all sea life after the liquid crystals) and they figure "Oh if that helps then we will do what we do best."

It's also the case that the music portrays you as a badass. As people have pointed out in other comments, Octo Expansion makes you feel like you want to escape, while Return of the Mammalians makes you feel like you want to infiltrate and conquer. You are the danger, so there isn't a need to feel concern for yourself because YOU are the problem for everyone else.
Honestly given more time I can see them overtaking off the hook, while fly octo fly is still the best song in the series this one and that one splatfest song come damn close, and are way above the rest of off the hook’s songs
Splatoon uses the most supercalifragilisticexpialidocious music for hero mode and then never shows it again. They r storing this like its a rare artifact💀💀💀
This song was an absolute banger when I first went through it! I think the neat detail about this in particular is that it was foreshadowed in the victory music after you defeat each of the member's boss fights and grab the treasure! I adore when composers do that in videogames.

I know the Squid Sisters are supposed to have a sound inspired by traditional japanese music, but Shiver does that like x1000 times stronger, so if you hear a kuboshi singing style (a very exaggerated change of pitch) you can tell it's Shiver, Frye sounds a bit similar to Pearl, very high pitch and joyous, but a bit cuter and expressive, she also has this very traditional sound -at least that's how I can differentiate them from SQ and OTH lol
