RECIPE: HARISSA AND KALE BEANS

INGREDIENTS
2 tbsp EVOO
180-200gm curly kale
2 tbsp tomato puree
2 tbsp harissa paste
1 tsp turmeric
700gm organic white beans (I like Bold Beans)
1 tbsp tamari
2 tsp brown sugar
Generous pinch of freshly cracked black pepper
Salt to taste
Hot water as needed
METHOD
Take the hard stalks off the kale and wash it well. Bring the olive oil to medium heat in a wok or sauté pan.
Soften the kale in the oil for a minute, then mix in the tomato puree, harissa and turmeric. Now tip in the beans along with their stock. Add hot water to loosen the beans and kale, and you stir gently to heat.
Now add the tamari, brown sugar, black pepper and salt, if needed, to your taste. Spoon over toast or serve under a piece of grilled fish.
