Coralin Gorbea it’s an Italian meringue so even tho she torched it, once you refrigerate the cake the meringue stays soft. The French meringue is the one you have to bake usually and it hardens.

If you use fabric strips around the cake pans while they bake it helps even out the bake and keeps the cake from caramelizing so much
