    Is there a reason why you didn't start with the aluminum (disposable) pan? Why transfer?

    Definitely doing this sometime this week. Question ; What is your reasoning behind cooking it in a pan at the beginning if you're changing pans when you wrap? Why not just on the grates for round one?

      You can do that if you want. I was doing it this way to keep the grill cleaner.

    About how long did this take in total?

      Unfortunately with smoking everything is done by internal temperature. With that said I would plan for between 4 to 5 hours

    Why not use spiral ham? That’s all I have

      you can , at the end you will pull it

      You can use spiral cut but it’s easier to pull apart when you are doing a whole ham

    But where is the flavor

      The flavor comes from smoking the meat and the sauce that you put on it. When you try it you’ll be amazed.
