  • Hi guys!
    Tongue is a delicacy beloved by many - in London you can get amazing tongue sandwiches in classic Jewish delis, and ox tongue is a very old British classic sandwich filler, so it's not as "weird" as one may think. It just has been neglected by many in recent times - but increasingly I am seeing it on menus in Fancy restaurants in London.
    As ever, us Persians got their first 😝 and have been the OGs of cooking and cherishing this amazing delicacy
    I am so excited to share with you this super authentic, traditional and EASY Persian dish of lamb tongues that are slow cooked for hours in a delicous, simple broth. This recipe is made with a few ingredients and is very simple and easy to follow, guaranteeing a scrumptious dinner.
    So be brave and give lamb tongue a try! You will love it.

    No need to peel off the skin , it's not waste....it's edible and completes the whole quality of what a lamb is...

    Im going to cook this recipie and add the tongue into the whole masoor (red lentil dal) im going to be making. Its a Parsi ( Zoarastrian dish.)

    Do you know how to make the jelly with the lamb tongue that comes in the can? Its my favourite food from New Zealand. Beats corned beef by far!

      Hey! Thanks for your message - I had no idea you could even get tinned lamb tongue. Maybe it’s only available in NZ? Absolutely tongue is better than corned beef 👌🏼

      @@touchmyknob NZ or UK? Although it seems a shame not to make it here given that we have plenty of lamb! I used to love the tins of lamb tongue, and was disappointed when supermarkets stopped stocking them. I wonder if DJs still carry them?

    Do you add saffron? If you did, when would you add it?

      Hi thanks for your question; I did not add saffron but if you want to I’d suggest adding freshly ground and then bloomed for 5-10 mins (a small pinch of saffron in 2 Tbsp hot water) into the pan during the final 10 mins. This will retain as much of that precious flavour as possible. It will enhance the colour but saffron is quite sweet and floral so will be interesting to see how you think it changes the flavour of the final dish … Let me know how it goes!

      Yes I do remove them at the end of the cooking process 😊

      Hey! Yes I did at the end, once they're cooked. You can see it in the video if you skip towards the end :) it peels off very easily. It's a bit grim if you are squeamish!!

    Hi Shadi, I'm a great fan of Persian cooking . Sadly there is a shortage of Persian restaurants in Dublin so I've had to learn to cook Persian dishes myself. I've just discovered your channel and I can't wait to try the lambs tongues' Many thanks for posting.       @@persiankitchen_ Many thanks for your quick reply. I'm not on instagram . I have made kookoo sabbzi but I'm sure that like all recipes yours will have a sllightly different twist to it. This is what makes cooking and looking someone else's take on them fun. The tongue recipe is easy enough to remember and I was thing more about summarizing longer dishes. Keep up the great work😀

    you must first drop the tongue on hot water and peel the upper skin. then cook them.
