I liked your recipe there are just a couple of things i would like to share with you. these are originally from Lucknow and are called tunde ke kebab. Having said that the actual way of making this is to take mince and do not wash it. Wash the meat well and ask the butcher to mince it. Add papaya, salt, ginger garlic paste and let it be for abt 2hrs. After that add the spice mix to it. Just adding a couple of masalas will enhance the flavours. Rose petals, saffron, a lil cream. You will not need to mince it in the processor. Another thing is when you do that you are incorporating a lot of air in it. Lastly, when you make the patty just wet your hand a little, keep a small bowl of water besides you.This will ensure smooth patties. You should try not to use egg, use ghee for frying.before you make the patty smoke it.
Tunde Kababs are a version of Galawati kababs made by a brand in Lucknow known as Tunde Kababi, Tunda means one who doesnt have a hand , the original owner of Tunde Kababs didnt have one hand hence the name. Galawati means melting , as these kababs are melt in your mouth
Masjid Tawheed thanks.. this Version is awesome too. Marinating chicken makes it all the more flavourful Murtaza Kandil no one has any issues. That's how this chef is taught the recipe. Why point out negative things. Ignore if you didn't like it.

I visited Lucknow in July of this year and had the opportunity to visit Tunday Kebabi in Aminabad. I must say as a Maharashtrian the amount of ghee in Awadhi paratha was unsettling for me but the kebabs in particular were just marvelous. The Galouti Kebab was so mesmerizing, I still remember the moment I put it on my tongue it just melts, like a truffle but the meaty texture as well as the essence was all evenly teasing my buds. After having a stomach full of kebabs, I made some more space for Prakash ki Mashoor kulfi and had it on their terrace seating. The humidity of Lucknow was honestly disturbing a lot of my experience, but food was a great escape for all of that heat. P.S.: - After my visit in July, 2 months later Taste Atlas published a list of 150 legendary dessert places around the world in which 10 were from India and Prakash ki Kulfi was in that list too.

I always feel tht whn we cook like this.. The sides which r on pan gets cooked.. But inside it won't cook properly.. So i give my keema one whistle in cooker Anywys.. I kno m finicky.. But thn m sure it has been cooked properly 😜

I went to Lucknow many decades back. At lunch my friends and I we were thinking of what to eat. While my friends were talking Chinese or Indian I walked to a nearby shop where a Muslim gentleman was sitting. He appeared the type to know food so I asked him for his suggestion of what and where to eat. I told him we were open to any suggestion. He asked of the kind of place we looked for, whether upscale or otherwise. I told him food was the only criterion. He told us that for the best kababs we should go to a shop where a place called tunde’s kababs served excellent kababs. We ate excellent kababs that were silky soft and delicious. About 3 decades after that I visited Lucknow and had the same again but this time in a 5 star hotel.
Your recipes are so simple and easy to prepare. I am fond of thukpa since my last visit to the himalayas. Appreciate if you coud have a veg and non veg recipe of thukpa.

Well, the steps you showed were quite wonderful, telling about why the green papaya is needed. The story of ageing Nawab gives an idea, how the recipe would have started. Damn nice! keep it up
About smoking them, no don't put it into your pipe and smoke it. Put the mince in a pot with a close fitting lid, , take a half of onion shell put some oil in it and a burning ember and put it into the onion shell and close it for at least 15 mins. The mince will be wonderfully smoked.

Nice .... you should have kept the seasoned mutton mix for 2 hours for marination. And add a lil bit of dry Rose petals and Zafraan (saffron), it certainly enhance the flavour.

Yousuf Ali raw papaya has papine which is used in making abortion pills ... so please be careful on what meat tenderizer you use.
