    SHAMI KEBAB
    Preparation time 10-15 minutes
    Cooking time 25-30 minutes
    Serve 2-4
    Ingredients
    For Marination
    1 kg Mutton with bones (shoulder cut) मटन
    250 gms Chana dal, soaked, चना दाल
    1 cup Curd, beaten, दही
    1 tbsp Ghee, घी
    1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
    Salt to taste, नमक स्वाद अनुसार
    3-4 no. Kashmiri dry red chilies, कश्मीरी सूखी लाल मिर्च
    3 no. Black cardamom, बड़ी इलायची
    1 tsp Black peppercorns, काली मिर्च के दाने
    1 Mace, जावित्री
    1 tsp Caraway seeds, शाही जीरा
    ½ tsp Coriander seeds, धनिये के बीज
    ½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
    1 tsp Coriander powder, धनिया पाउडर
    ½ tsp Turmeric powder, हल्दी पाउडर
    For Shammi Mixture
    1 tbsp Ghee, घी
    2 medium size Onions, sliced, प्याज
    1 inch Ginger (peeled & sliced) अदरक
    Marinated Mutton, मैरिनेटेड मटन
    ¼ cup Water, पानी
    ¼ tsp Black pepper powder, काली मिर्च का पाउडर
    Salt to taste, नमक स्वादअनुसार
    For Chutney
    ⅓ cup Walnuts
    ½ tsp Ghee, घी
    Salt to taste, नमक स्वादअनुसार
    1 tbsp Flax seeds, अलसी के बीज
    1-2 no. Green chilies, less spicy, हरी मिर्च
    ½ inch Ginger, grated, अदरक
    few Mint leaves, chopped, पुदीने के पत्ते
    1 tbsp Tender Coriander stems, chopped, धनिया के डंठल
    Salt to taste, नमक स्वादअनुसार
    ½ tsp Sugar, चीनी
    ¼ tsp Black pepper powder, काली मिर्च का पाउडर
    ½ cup Curd, beaten, दही
    For Stuffing
    1 large Onion, finely chopped, प्याज
    2-3 no. Green chillies (less spicy & spicy) chopped, हरी मिर्च
    1 tbsp Mint leaves, chopped, पुदीने के पत्ते
    1 tbsp Coriander leaves, finely chopped, नमक स्वादअनुसार
    Salt to taste, नमक स्वादअनुसार
    For Shikampuri kebab
    Prepared Mixture, तैयार किया हुआ शमी मिश्रण
    Prepared Stuffing, तैयार किया हुआ मिश्रण
    Oil for frying, तलने के लिए तेल
    For Shammi kebab
    Prepared Mixture, तैयार किया हुआ शमी मिश्रण
    Prepared Stuffing, तैयार किया हुआ मिश्रण
    1 Egg, beaten, अंडा
    Oil for shallow frying, तलने के लिए तेल
    For Garnish
    Coriander sprig, धनिया पत्ता
    Onion roundels, लच्छा प्याज
    Lemon wedges, नींबू फांक
    A pinch degi red chili powder, देगी लाल मिर्च पाउडर
    Process
    For Marination
    In a bowl, add mutton, chana dal, curd, ghee, ginger garlic paste, salt to taste, kashmiri dry red chili, black cardamom, black peppercorns, mace, caraway seeds, coriander seeds, degi red chili powder, coriander powder, turmeric powder and mix it well.
    Keep it aside for further use.
    For Shammi Mixture
    In a pressure cooker, add ghee, once it's hot, add onion and saute until Translucent.
    Add ginger, marinated mutton, water and cook it for 7-8 whistles or until cooked well.
    Transfer it to a parat and let it cool down, separate the bones and flesh.
    Grind it to a smooth mixture, add black pepper powder, salt to taste and keep it aside for further use.
    For Chutney
    In a pan, add walnut, ghee, flax seeds and toast it for a minute.
    Transfer it to a bowl, add green chillies, ginger, mint leaves, coriander stems, salt to taste, sugar, black pepper powder, curd and mix it well.
    Keep it aside for further use.
    For Stuffing
    In a bowl, add onion, green chilies, mint and mix it together.
    Keep it aside for further use.
    For Shikampuri kebab
    Take the prepared mixture, stuff the filling and make lemon size balls. Give it a desired shape.
    In a pan, add oil, once it's hot, place the kebab and shallow fry until golden brown in color.
    Transfer it to a serving dish and garnish it with coriander sprig, lemon wedges.
    Serve hot with chutney.
    For Shammi kebab
    Take the prepared mixture, add prepared stuffing and mix it well.
    Make lemon size balls and give it a desired shape.
    In a pan, add oil, once it's hot, place the kebab and shallow fry until golden brown in color.
    Transfer it to a serving dish and garnish it with coriander sprig, lemon wedges.
    Serve hot with chutney.

    Thank you for correctly highlighting the history behind the name Shaami Kebabs. Shaam is an ancient name of Syria, even in Muslim prophetic narrations, Syria is called Shaam in Arabic. Appreciate your historical culinary knowledge Chef. People who study religious sciences also use “Shaami” at the end of their scholarly name in Islam. ❤

      But Shaam is called not only to syria. Syria, lebanon, Jordan, palestine, iraq, iran this whole area is called shaam n thats why its said that most of our Prophets came in the shaam area

    I tried this, didn't use the mixer. Just mashed the mutton from the cooker into batter old school way... It turned out really good. My wife and daughter loved it Thank you Ranveer.

    Main aap ki video isliye dhekhti hu kyuki main Lucknow Se hu. But ab main London me rehti hu per sari dishes bhut miss krti hu. Apki video dhek ke ye sari dises ko banate hai or khate hai.     Authentic recipe and explanation Ranveer. For deep fried kababs we dip it in egg and then fry. Also adding some lemon juice after grinding gives it a good flavour. This is how we traditionally make at home

    Nostalgic Chef. Reminds me of my late mom and you showed this recipe in the month of Ramadan- bohat saari purani yaadein aagayi.
    Similar recipe - no curd, no bone (while boiling) and no onions later. Well ab to main vegetarian hoon, but I still drooled and had a flashback🙏

    And the taste of badi elaychi and Kali Mirch is profound.

    My wife regularly watches your videos. Yesterday she was watching your video of Shami Kebab and I overheard you saying the origin of this from Syria. You also said it didn't get it's name from evening( sham) and something else. I have heard you giving the origin of the recipes for almost all.Very informative indeed. I didn't hear it from any other chef. Let me tell you that country Syria in Arabic is known as SHAAM. The origin as you said is Syria which in Arabic is SHAAM and surly Smami indicates it's origin from SHAAM, Syria.

    I like you because you give all the authentic Indian recipes. Sometimes keeping the recipes basic dadi Nani wali is more tasty and healthy instead of putting 18 19 masalas and altering the original recipes . So much logic given as to why. Very logical answers.
